The Admiral at the Lake is a retirement community located on the lakefront of Chicago with spacious modern apartments in the heart of the city. Offering a range of support for retirees, The Admiral helps make the most of retirement in a safe and secure environment. We are a continuing care retirement community (CCRC) and a Lifecare community serving those 62 years and older. Our residents come from nearly every walk of life and hail from Chicago, the suburbs, and as far away as New York, California, and Florida. The Admiral provides a quality environment that supports an ageless spirit, promotes health and wellness, and fosters engagement, collaboration, and liberating choices. Residents design and direct the recreational, intellectual, social, and spiritual life of the community. We are proud to be affiliated with the not-for-profit Kendal Corporation. This month, we’re featuring one of our resident Alicia’s favorite holiday recipes: Swedish Melt-In-Your-Mouth Spritz Cookies! 🍪

Ingredients:
4 hard-boiled egg yolks (crushed) • 1 cup butter (room temperature) • 1/2 cup sugar • 3/4 tsp almond extract • 1/4 tsp vanilla • 2 cups all-purpose flour

Directions:
Preheat oven to 350°F. Cream butter and sugar until fluffy; add extracts. Mix in crushed egg yolks, then flour until dough forms (do not overmix). Use a cookie press or stamp, decorate with sugar, and bake 10–14 minutes. Cool and enjoy!

Tip: Dough can be chilled and cut with cookie cutters - handle gently, as cookies are delicate.

Founded in 1858, The Admiral is Chicago’s oldest nonprofit organization dedicated to creating senior living with innovative, responsive solutions to address the needs of Chicago area seniors. Today, after more than 150 years, we’re beginning a new chapter in the future of senior living in Chicago, one specifically designed to meet the expectations of people like you. The Admiral at the Lake is now an affiliate of Kendal, a nonprofit organization that also has a rich history of serving older adults, with 14 communities in six states, and advocacy and education initiatives nationwide.
