Chicken nugget hack for weight loss
Ingredients:
1 lb. ground chicken
½ tbsp. paprika
½ tbsp. garlic powder
1 tsp. of pepper
½ tsp. of salt
4 oz. of pork rinds (*watch for hiddlen dairy, oil, or sugar ingredients. A good option is Epic pork rinds)
Pam Spray, or equivalent
Instructions:
Preheat the oven to 425 degrees. Line a baking sheet with aluminum foil and spray foil.
In a large bowl, mix ground chicken and all seasonings (do not add pork rinds). Mix until well blended.
Open the bag of pork rinds a little to get the air out. Hold that end shut and pound the bag with a rolling pin or fist to break the rinds into tiny crumbs. Be careful, you don’t want the bag to burst. Put the pork rinds into a medium sized bowl.
Once the pork rinds are crumbs, scoop the chicken mixture out and roll into a small, cookie sized ball. (It helps to use a small cookie scoop). Plop the ball in the crumbs, roll, and smoosh (not completely flat) into pork rinds to ensure the nugget is fully coated.
Place each coated nugget on the baking sheet, spreading evenly apart.
Cook for 5 minutes, flip each nugget, and then cook for another 5 minutes. Bake additional minutes to the desired crispiness.
Dip in sugar free ketchup, mustard, and/or Walden Farms Ranch. Enjoy!
