Here’s another DIY recipe to save you time & money. You can seriously make this faster than going to the store and back, with little it cost. I’m allergic to egg yolks so I increase the egg white to approx 1/2 c.

Homemade Mayonnaise

Prep Time 5minutes
Servings: 48
Calories: 11kcal

Ingredients
2 large eggs farm fresh is ideal
1 tablespoon lemon juice (I use an entire small lemon)
1 teaspoon kosher salt
½ teaspoon distilled vinegar
½ teaspoon ground mustard
2 cups Extra light olive oil be sure to use light
Instructions
Add eggs, lemon juice, salt, vinegar, and ground mustard to a wide mouth mason jar. Use immersion blender to blend until mixture has emulsified and it starts to look creamy.
With a slow steady stream, add the oil while continually blending and moving the immersion blender around to fully mix. Once all of the oil has been added and the mayonnaise is fully blended, taste and add more lemon, salt, and/or mustard powder, if necessary. If the mayo tastes really creamy and oily, keep adding more salt and lemon until it tastes like you prefer.
Store in airtight container in refrigerator.
Notes
This recipe makes about 3 cups of mayonnaise. Serving size based on 1 Tablespoon (for nutritional info).
Homemade mayonnaise will keep in the refrigerator for about 1-2 weeks.

How to Make Elderberry Syrup
This classic elderberry syrup combines antioxidant-rich elderberries with warm spices to help your body respond to seasonal stress. Plus, it comes together in under an hour, providing targeted relief when you need it most.
This recipe uses pure ingredients that make it more effective than store-bought versions and much cheaper.

Ingredients
4 cups water
1 cup dried elderberries
1 T fresh ginger, sliced or grated
1 cinnamon stick or 1 tl ground cinnamon
3-4 whole cloves
¾-1 cup raw honey, to taste

Instructions
Step One: Place the elderberries, water, ginger, cinnamon stick, and clove into a saucepan set over medium heat. If you’re using ground cinnamon, stir.

Step Two: Bring the herbs to a gentle boil, then turn the heat to low and simmer, uncovered, for 30-40 minutes, until the liquid has reduced by about half.

Step Three: Remove the elderberry mixture from heat and cool for 5 minutes. Strain the liquid through a fine-mesh strainer, pressing the contents to retain all the juices. Discard the leftover berries.

Step Four: While the liquid is still warm, stir in the honey until dissolved. This will thicken the mixture, and it will thicken even more when chilled.

Step Five: Pour into a clean glass jar or bottle, and for best results, refrigerate immediately.

While I’ve got some down time to heal from surgery, I’ll be sharing some fun extras for you to do at home. These will be DIY self care or fun crafts that are also kid friendly for spring break or adventures with grandparents.
Here’s crazy idea 1 to get you started

Biodegradable Sun Catchers made from household ingredients like gelatin or cornstarch, water, and vinegar. They are created by heating a mixture until it becomes a thick gel, coloring it, and drying it in molds for 24–48 hours. These translucent, flexible decorations can be decorated with pressed flowers or glitter.

Basic Recipe & Instructions
Ingredients:
1 T unflavored gelatin (or 2 T cornstarch)
4-5 T boiling water
1 tbsp white vinegar
food coloring or natural dyes
Silicone molds

Method:
Mix ingredients in a pot and heat over low heat, stirring constantly for 3–5 minutes until thick and smooth.
Remove from heat, add color (e.g., beet juice, food coloring), and optionally add glitter or essential oils.
Pour the mixture into silicone molds
Arrange pressed flowers, leaves, or petals on top for decoration.
Allow to dry for 24–48 hours in a cool, dry place until firm.
Gently remove from molds and hang in a window using string.

Tips for Success
Drying: Thin, shallow pours dry faster and are more translucent.
Flexibility: Adding 1 t of glycerin can prevent the bioplastic from becoming too brittle.

Lifespan:
Gelatin-based suncatchers last about 1–2 weeks indoors, depending on humidity.
Disposal: When they begin to degrade or curl, they can be composted.
