This soup has our house divided but I have to share it because it has become one of my favorites! It's one of my comfort soups, something I will happily make if I feel I'm coming down with a cold and I will often double the ginger and the garlic both for taste and medicinal properties!

This was a recipe a friend shared and has been kept in our rotation ever since! Don't forget those ramen eggs! 🤌🏼🤌🏼🤌🏼

Some tips I've learned...
My kids weren't a big fan of the bok choy so we sub with carrots and broccoli.
I also like to saute my chicken in toasted sesame oil and about a tbsp of ginger paste for added flavor.
This can easily be made on the stove top instead of the instant pot, just dice the chicken and saute.
And finally I like to drizzle Sriracha sauce on top of mine.

Here's a sourdough recipe I just tried and liked!

I decided to make one loaf, cinnamon raisin bread. My best guesstimate is that I used about 1/4 cup brown sugar, 1 tbsp cinnamon, and 1/4-1/2 cup of raisins. When I rolled out the bread to roll it up and shape it, I sprinkled it all on top of the flattened bread before I rolled it up, and Viola!

I don't know who needs to hear this... But it's okay to eat something from a box. Sure, it's not the ideal or healthiest thing to do all the time. There can be bad ingredients or a lot of sugar (these gluten free brownies have a TON). But sometimes it's more about the mental health aspect. Or sometimes it's just about a step in the right direction. Kudos to you if you made something from a box or a freezer meal at home instead of picking something up from the drive thru. Well done if you put your own mental sanity or prioritized your physical energy and fed yourself and your family with fast food, or any other demonized food. Good health is deeper than what you eat, and everyone's journey looks a little different.
