Monday breakfast 🌞 -Leftover broccoli cheddar frittata, whole grain English muffin, and fruit salad.

-Toddlers are all developing at different rates and times! If you’re having trouble getting your littles to eat at meal time, remember to let them determine how much they eat.

Offering a variety of foods/food groups is the most important thing you can do, and then leave the exploring of different foods/flavors to them!

Merry Christmas and Happy New Year! I hope you all enjoy lots of time with friends and family this holiday season, and wish everyone a happy and healthy 2023!

I am officially back after taking a little leave to be with our newborn daughter, Maya☺️ We are so thankful for a healthy, sweet baby!

A quick, one-pan meal packed full of veggies, garden herbs, and flavorful Italian chicken sausage.

How to?

1. Pick your favorite veggies and chop. I used potatoes, red, yellow, and orange bell peppers, celery, carrots, and mushrooms. I chopped and added garden herbs as well (thyme and rosemary).
2. Add chicken sausage of choice.
3. Drizzle pan (with all ingredients added) with olive oil, and add salt and pepper.
4. Cover with lid and cook on med high for ~25 min, stirring every 5 mins or so. When veggies are starting to soften, remove lid to let water cook off.
5. Enjoy little clean up and a tasty meal!😋

Ever wondered what working with a Registered Dietitian looks like?

I love this breakdown that briefly hits on what having a “healthy” diet looks like. Food is meant to be enjoyed, not restricted. Eating is something you can look forward to! There are no good or bad foods. All foods are acceptable, some being more nutritious than others. Listen to your body and be mindful of hunger and satiety cues.

Who are the majority of my clients? I see a wide variety of clients with different nutrition goals and challenges, but the large majority come to me for weight management. I absolutely love working on these very things (stated above) with clients each day. It’s amazing what letting go of diet culture can do. I take a holistic approach looking at each piece of the puzzle and individualize your plan to fit your unique needs and goals.

Do you have recipes that are time intensive? Do you wish you could make them more often but don’t have the time or energy?

These Roasted Sweet Potato and Cauliflower Tacos are a favorite in our house, however, they are not the quickest meal in my back pocket!

For recipes like this, double or triple parts of the recipe that you’re able to freeze. For these, the chopping takes quite a while. I bake the filling and then freeze half of it (so I cut down on my prep the next time we want these tasty tacos). I’m simply left with the guac and crema toppings to whip up the next time we want them!

Finding simple ways to cut down on prep time can help with the following:
1. Being more likely to prepare nutritious meals at home
2. Not being overwhelmed with prep, chopping, etc.
3. Having less cleanup👏
