Strawberry Shortcake Cups
Ingredients
1 pound fresh strawberries, hulled and sliced
1/3 cup granulated sugar
1 prepared pound cake (store-bought or homemade)
2 cups heavy whipping cream
1/4 cup powdered sugar
1 teaspoon vanilla extract
Whole strawberries for topping
Fresh mint leaves for garnish (optional)
6 to 8 clear dessert cups
Instructions
Start by placing the sliced strawberries into a bowl and sprinkling the granulated sugar over them.
Stir gently until the strawberries are coated in sugar.
Let the bowl sit on the counter for about 20 minutes so the berries release their juices and become syrupy.
While the strawberries rest, cut the pound cake into small bite-sized cubes.
In a mixing bowl pour in the heavy whipping cream.
Add the powdered sugar and vanilla extract.
Using a hand mixer beat the cream until soft fluffy peaks form.
Set the whipped cream in the refrigerator while you assemble the cups.
Place a small layer of pound cake cubes in the bottom of each dessert cup.
Spoon a layer of the sweet strawberries along with a little of their red syrup over the cake.
Add a generous spoonful of whipped cream on top of the strawberries.
Repeat the layers again with more cake cubes and more strawberries.
Finish each cup with a big fluffy swirl of whipped cream on top.
Place one whole strawberry with the green stem right on top of the whipped cream.
If you like, add a small fresh mint leaf for a pretty finishing touch.
Chill the cups in the refrigerator for about 30 minutes before serving so the cake soaks up the sweet strawberry juices.
Mom Tip
If you are making these for a party or family gathering, you can assemble them a couple hours ahead and keep them in the fridge. The cake soaks up the strawberry syrup and gets even more delicious, just like a classic homemade shortcake.
