Yes! I'm making simple easy dinners. I make 2 versions of this dinner- Italian and "sort of greek", which I'm doing tonight. I mit Eggplant, onion, Canned tomatoes ( with chiles?" , sliced kalamata olives garlic, evoo, oregano, red pepper flakes and veggie broth together, and let it simmer. ( the Italian version skips the kalamatas and uses Italian seasoning instead of Oregano. Feel free to add Sliced green olives but they aren't a staple ingredient in our house) When that's cooked i add 2 cod fillets(or white fish of your choice) for about 6-10 minutes and serve it with cauliflower rice.
