Lentil Wraps

Vegan, GF, high-protein, fiber-filled, nutrient dense and delicious - and only TWO ingredients!

1 cup uncooked lentils

2 cups organic vegetable broth

Seasonings of choice (optional)

Soak the lentils in the veggie broth for at least 3 hours in the fridge.

Add lentils and broth to a blender and blend until smooth.

Pour into a pre-heated, greased pan, over medium heat. Flip when sides start to pull away from the edge (about 3 minutes).

Transfer to a plate covered with a damp kitchen towel.

Repeat with remaining batter.

Golden Bean Soup - this delicious anti-inflammatory pot of goodness, will soothe whatever ails you.

1 tbsp olive oil or vegetable broth
1 yellow onion, diced
2 carrots, diced
4 cloves garlic, minced
1 rib celery, diced
1 tsp dried oregano
1/2 tsp black pepper
7 cups vegetable broth
1 can white beans, drained and rinsed (or any bean of choice)
2 lemons, squeezed
1 handful fresh kale
1/4 cup tahini
1 tsp lemon zest
1/4 cup fresh dill
1 tsp turmeric
In a pot over medium heat, add the onion, carrot, celery and garlic. Sauté until softened, approximately 5 minutes.
Add the vegetable broth, drained and rinsed can of white beans, Bring to a boil, then simmer for 10 minutes covered.
Stir in the kale, fresh dill, lemon and lemon zest. Cook another ten minutes until kale is wilted

Stir in the tahini and turmeric until combined and heated through. Enjoy!

I HATE baking. I'm not a patient chef so the precise measuring and lack of spontaneity and freedom drives me crazy. That is why you will rarely see recipes for such, on any of my sites. HOWEVER - this GF Honey Oat Bread is an exception. I will never buy GF bread again! This quick bread is fast, easy and so soft yet substantial. It can be a healthy snack on its own. Make it!

Ingredients:
1 cup rolled oats
1-1/3 cup oat flour
1 cup GF all-purpose flour
2-1/4 tsp (aluminum-free!) baking powder
1/4 tsp baking soda
1-1/4 tsp salt
8 ounces plain coconut yogurt
1 large egg
1/4 cup avocado oil
1/4 cup honey
3/4 cup nut or oat milk

Preparation:
Preheat oven to 375 with rack in middle of oven. Generously grease a 9x5 loaf pan with extra avocado oil, and set aside.

In a large bowl, stir together the flours, baking soda, baking powder, and salt.

In a medium bowl, whisk together the oats, yogurt, oil, egg, honey and nut milk.

Pour yogurt mixture into the flour bowl and gently stir to combine until just mixed. Do not beat together, or bread will be too dense/tough.

Scrape into prepared loaf pan and smooth with t. Sprinkle whatever you would like to garnish your bread top with, such as oats, sunflower seeds, etc.

Bake 40-50 minutes, until browned on top and toothpick comes out clean when inserted in center.

Allow to cool in the pan on a rack for 15 minutes. Turn out on to the cooling rack and allow to cool until just barely warm - approximately 45 minutes to one hour.

Wrap or store in an airtight container, in the refrigerator.

Reason #587 to grow your own produce; Beware of lettuce labeled as "Conscious Greens". It constitutes the first CRISPR-edited “food” item available to consumers in the United States.

CRISPR, which stands for clustered regularly interspaced short palindromic repeat, was used to edit the DNA of mustard greens, removing a key gene that gives them their pungent flavor.

Amazingly (yet not surprising), U.S. regulators do not consider gene-edited foods to be genetically modified, even though they are. As a result, none of the CRISPR produce items coming down the pipeline from Pairwise have to be labeled – meaning you and your family will not even know you are eating them.

Founded in 2017, Pairwise had successfully raised $90 million by 2021, and another $25 million since. All that cash will allow the company “to bring new varieties of fruits and vegetables to market.”

In other words, Conscious Greens Purple Power Baby Greens Blend is just the beginning. Pairwise is planning to unleash a host of new GMO produce items that will slowly begin to take over all the natural and organic fruits and vegetables sold at American grocery stores.

ENERGIZING LEMON BARS - NO BAKE!!
Crust Ingredients:
1 cup walnuts, pecans or cashews
1/4 cup unsweetened, shredded coconut
6 large Medjool dates (pitted)
1/4 tsp sea salt
1 Tbsp lemon zest
1 tsp water, as needed for combining

Filling ingredients:
6 tsp coconut oil
3 Tbsp coconut butter (found in the peanut butter isle)
3 Tbsp pure maple syrup or local raw honey
3 Tbsp fresh-squeezed lemon juice
2 tsp lemon zest

Directions:
Combine all crust ingredients in a food processor and pulse until combined, adding the water as needed, to pull together.

Press crust into 7x5 glass dish

Melt (slowly!) coconut oil and coconut butter, stirring constantly. Remove from heat as soon as melted.

Stir in remaining ingredients and taste for sweetness, adjusting as needed.

Pour on top of the crust, add some extra zest for garnish and place, covered in fridge or freezer for at least 2 hours. I use a warmed pastry cutter to cut squares for serving. YUM!

Knowing what is in your personal care products is critical to the health of your family. Physicians do not attribute the majority of health issues we have to the everyday products we are using in our home and on our bodies, because, like nutrition, it is not a part of their education. Our skin is our largest, most protective organ, and what we expose it to on the daily, either harms or heals. The FDA does NOT restrict the following toxins (even though most are banned in other countries). Companies are not even required to list fragrances, for example, on their product labels. Do your own research and avoid the following top offenders, at all costs;

Fragrances - this will be on the label, but not the exact chemicals used!
PEG's
Petroleum
Phthalates
Parabens
Aluminum, lead, heavy metals
PFOAS, PFC's, Teflon
Synthetic Vita A - Retinyl Palmitate, Retinoic Acid
Methylisothiazolinone (named "allergen of the year" by the American Contact Dermatitis Foundation)

All the above toxins are found in commercial laundry detergent, body lotion, colognes, perfumes, air fresheners, anti-bacterial products, make-up, sunscreen, bubble bath, candles, cookware, deodorant and anti-perspirants, hair products, toothpaste, and the list goes on...

All of the above have multiple studies proving they cause hormone and endocrine disruption, chronic allergies, cancerous tumor growth, organ damage, immune suppression, birth defects and reproductive system damage. I have seen it in my own clients. The U.S. still deems them as "generally safe", because people aren't literally dropping dead, suddenly, from using them. When you are continually bombarding your largest organ with these toxins, however, problems will arise, sooner or later.

There are many natural alternatives, and even homemade versions that are effective, and will also save a ton of $$. If you don't have time to DIY, here are a couple I buy from;

Smokey Guacamole Crack Dip! You can't stop eating this healthy dip, I promise 😋
3 large ripe avocados
2 Roma tomatoes, seeded and diced
1 shallot, peeled and diced
1/2 small Poblano, seeded and diced
3 oz. Miyokos Vegan cream cheese (room temperature)
3 tbsp fresh lime juice
3 tbsp fresh chopped cilantro
3/4 tsp smoked paprika
1/4 tsp oregano
Salt to taste

Combine all ingredients in a medium mixing bowl. Use a fork to mash the avocado and stir in the cream cheese, then mix the ingredients together until just combined, but still has texture. Salt to taste. Serve at room temperature or chilled. Serve with my gut-healing tortillas or homemade almond crackers (www.eatwholeandthrive.com) ENJOY!

Edamame Falafel - baked, not fried!

3 cloves garlic
3/4 tsp Himalayan salt
12 oz bag - frozen edamame - thawed and patted dry
2 T. granulated onion
2 T. finely chopped parsley
1 tsp black pepper
1 tsp. cumin
2 tsp coriander
1/4 cup Quinoa flakes

Preheat oven to 350 degrees.
Pulse garlic and salt to mince.
Add edamame and pulse just to combine
Add remaining ingredients and pulse just to mix.
Using a small melon ball scoop, taking heaping scoops of mixture, pressing down to firmly pack, and place 1 inch apart on greased baking sheet.
Bake 25-30 min. Enjoy this protein-packed, nutrient dense meal or snack!

Butternut mole enchiladas!😍

Ingredients
2 lb. butternut squash, peeled and cut into 1/2-inch pieces
1 tbsp. olive oil
1/4 tsp. chili powder
Kosher salt
pepper
1 (15-ounce) can tomato sauce
2 cloves garlic
1/2 small onion, chopped
1 chipotle chile in adobo sauce, plus 1 tablespoon adobo sauce
1/2 tsp. ground cinnamon
1 tbsp. lime juice
1/4 c. smooth peanut butter
3 oz. Lilly's (Stevia sweetened) dark chocolate
12 soft corn tortillas
1 (15-ounce) can black beans, rinsed
4 oz. Miyokos cashew cheese, crumbled, plus more for serving
1 avocado, cut into chunks.
Toasted pepitas and cilantro, for topping

Directions

Heat oven to 400°F. On rimmed baking sheet, toss squash with oil, chili powder and pinch each salt and pepper.
Roast until tender, 15 to 20 minutes. Set aside.
Lower oven temp. to 350°F.

Meanwhile, make sauce:
In blender, puree tomato sauce, garlic, onion, chipotle
chile and adobo, cinnamon, lime juice and 1/4 teaspoon each salt and pepper until smooth.
Transfer to small saucepan and simmer on medium 4 minutes.
Add peanut butter and chocolate, stirring until melted and smooth. Remove from heat.
Coat 13" by 9" baking dish with nonstick cooking spray, then spread 1/3 of mole sauce on bottom.
Fill each tortilla with scant 1/4 cup squash and 1 tablespoon
each black beans and crumbled cheese.
Roll and place seam side down in prepared dish.
Spoon another 1/3 of mole over top, cover and bake 20 minutes. Uncover, spread with remaining mole and bake 5 minutes more.
Remove from oven and top with avocado and crumbled cheese, pepitas and cilantro. ENJOY!!

Thai Chickpea Salad w/Peanut Dressing!

This bright, flavorful salad makes a great side dish or Vegan main.

For the salad:
1 red bell pepper, diced
1 cup shredded carrots (from the bag)
½ small head of red cabbage, chopped (about 2 cups shredded cabbage)
1 (15 ounce) can chickpeas, rinsed and drained
½ cup cilantro, finely chopped
¼ cup finely chopped green onion
1/2 jalapeño, seeded and diced

For the peanut dressing:
2 tablespoons peanut butter
1/2 tablespoon freshly grated ginger
1 clove garlic, minced
1 teaspoon apple cider vinegar or rice vinegar
1/8 teaspoon red cayenne pepper
¼ teaspoon ground turmeric
Salt and freshly ground black pepper, to taste
2-3 tablespoons warm water, to thin dressing

To garnish:
Extra cilantro
¼ cup roasted cashews

Salads and bowls are the best way to get a ton of healthy veggies in your meals - and life! This Mediterranean Pasta Salad can be eaten hot or cold and is high protein, GF and Vegan! Of course you can add whatever proteins you like, but the protein here comes from the veggies and the lentil/chickpea pasta.

Dressing:
⅓ cup freshly squeezed lemon juice
⅓ cup olive oil
2 garlic cloves, minced
2 teaspoons dried Italian seasoning
2 teaspoons Monk Fruit sweetener
½ teaspoon sea salt
½ teaspoon freshly ground black pepper
½ teaspoon dried chili flakes

Remaining ingredients:
1 yellow bell pepper - cut in 1" pieces
1 green zucchini, halved lengthwise and then cut crosswise into ½"-thick pieces
1 cup broccoli - broken into small florets
1 red bell pepper, cut into 1" pieces
1 red onion, cut into ½"-thick wedges
3 garlic cloves, minced
¼ cup olive oil
1 teaspoon sea salt
1 teaspoon freshly ground black pepper
1 14 oz. can artichoke hearts in water, drained and halved
12 ounces chickpea, lentil, mung bean or favorite GF pasta

INSTRUCTIONS
Make the dressing:
Combine the dressing ingredients in a small jar with a lid and shake vigorously until emulsified.
Make the salad:
Preheat oven to 450 degrees. Place zucchini, bell pepper, broccoli, onion and garlic on a large baking sheet. Drizzle with olive oil, season with salt and pepper, and toss to coat. Spread evenly on baking sheet(s).
Bake for 15 minutes, remove from the oven and stir gently. Bake for an additional 10 minutes. Transfer vegetables to a large bowl. Add artichoke hearts and half of the dressing and toss to combine. Let marinate for at least 30 minutes and up to 3 hours, stirring occasionally.
Cook pasta according to package directions until al dente. Drain and transfer to bowl with marinated vegetables. Add remaining dressing and toss gently to combine. Serve immediately, at room temperature or cold.

Top with Follow Your Heart Vegan Feta or Mozz Shreds!
