A short FYI about Capezzana’s organic extra virgin olive a high-polyphenol, cold-pressed Tuscan oil (Moraiolo, Frantoio) and hydroxytyrosol.

In recent years, more and people have started looking at high-quality extra olive oil not only as a kitchen staple but also as a natural source of powerful health benefits. One of the key benefits of a good quality extra virgin olive oil’s reputation is hydroxytyrosol, a polyphenol known for antioxidant and anti-inflammatory properties. What makes hydroxytyrosol unique is its exceptionally high antioxidant capacity. Over a period of time there has been highly cited evidence-based research of its potent anti-oxidant and anti-inflammatory effects, among others and notations that it seems to be a good candidate to promote functional nutrition.

Buongiorno. Did you know coffee and mascarpone were such good friends? Of course there is the traditional tiramisu but then there is the amazing and delicious Coffee Mascarpone Cream. Can be added to your coffee but also makes a versatile and delicious base for various desserts and topping for breakfast breads or an easy dessert mousse.

9 oz mascarpone cheese
½ cup heavy whipping cream
3 tablespoons cooled espresso coffee
¼ cups powdered sugar
a pinch of sea salt

Whip the heavy cream until soft peaks form and set aside.
In a bowl, mix the mascarpone, powdered sugar, and cooled coffee until smooth. Gently fold in the whipped cream to maintain its light texture. Chill the mixture in the refrigerator until ready to serve .
