Easy way to get veggies?

Veggie Patties

Ingredients:
5 eggs, beaten
1/2 c fat free cottage cheese
1 1/2 c almond flour
1/3 c chopped spinach
3/4 c fat free mozzarella (or any shredded cheese)
1/2 c shredded carrots
1/2 tbsp of herbs (I used parsley)

Mix all into a bowl and then scoop onto a parchment paper lined baking sheet. Bake for 15-18 minutes at 350ºF and serve with your favorite dip.

Meal Prep Cookie Dough Baked Oats

1/2 banana
1/2 cup rolled oats
1 egg
1/4 teaspoon baking powder
1/4 cup milk
1 tablespoon dark chocolate chips

1. Add banana, oats, egg, baking powder, and milk to a blender. Blend until the mixture is well combined and smooth.
2. Pour the mixture into your prepared container.
3. Sprinkle chocolate chips evenly over the top of the mixture.
4, Bake in the oven on 180 degrees celsius for 20 to 25 minutes or until cooked and lightly golden. Enjoy!

Ingredients:
1 sweet potato, cooked
2 whole eggs
6 tbsp flour
3 tbsp cocoa powder
1 tsp vanilla extract
1/4 tsp baking soda
Pinch of salt
1/2 c maple syrup (I used allulose syrup)
1/4 c Lily’s stevia-sweetened chocolate chips

Bake at 350ºF for 30 minutes.

Potato Quiche

INGREDIENTS
-5 golden baby potatoes
-1 large handful of spinach, chopped
-1/2 yellow pepper, chopped
-6 cherry tomatoes, halved
-9 tbsp egg beaters
-1/2 cup ultra-filtered high protein milk
-1 cup fat free cheese
-Salt & Pepper to taste

METHOD
Preheat oven to 200ºC (425ºF). Boil potatoes until soft (I microwaved mine 😬). Add potatoes to the dish and smash them flat to cover the dish and season with salt and pepper. Top with spinach, bell pepper, and tomatoes, then add egg beaters and milk and pour over veggies. Top with fat free cheese and bake for 30-40 minutes or until eggs are cooked through.

Hi Pro Banana Pudding

Ingredients
Fluffy Yogurt
-523 g vanilla Oikos Triple Zero Greek yogurt
-1 oz Banana sugar free instant pudding mix
-64 g Kodiak Cookie Butter Granola, crushed (I used Keebler Mini Graham Cracker Crust

Instructions
Crush granola (or graham cracker crust) into fine crumbs using a food processor or by hand in a bag. In a mixing bowl, whisk yogurt and pudding mix together until very thick and smooth. Fold most of the granola crumbs into the fluffy yogurt, reserving a small amount for topping. Divide mixture between two dessert cups and sprinkle remaining crumbs on top. Serve right away or chill for at least 1 hour for an even thicker texture.

-2 tbsp Ranch + 2 tbsp nonfat plain Greek yogurt
-shredded lettuce
-diced tomato

~360 cal / Protein: 44g / Carbs: 11g / Fat: 17g / Fiber: 4g

*make sure to use non stick mat or parchment paper because the cheese will stick to metal/ glass.

375°F (190°C)
8–12 minutes
