Our amazing provider Erika teamed up with her daughter, Abby, to whip up a fun and delicious twist on a classic—deconstructed stuffed peppers!

Recipe:
(280 cal each/6-8 servings)
1-1.5 lbs ground beef or ground turkey
2 tbsp olive oil
1 yellow onion, diced
2 bell peppers, diced
2 ribs celery, diced
2 cloves garlic
2 can diced tomatoes
2 tbsp tomato paste
1 ½ cup corn, canned or frozen
2 tbsp dried basil
1 tbsp dried oregano
½ tsp red pepper flakes
¼ cup parsley (1 tbsp dried)
Italian seasoning, to taste
salt and pepper, to taste
1. In a skillet, over medium heat, saute beef in olive oil along with onions, celery, and peppers until veggies soft and beef browned.
2. Add garlic and saute a few more minutes.
3. Add your diced tomatoes and tomato paste.
4. Add all of your seasonings and corn.
5. Saute a few more min, especially if corn is frozen.
6. Turn heat down to simmer a bit longer.
7. Prepare your veggie rice or preferred base as desired.
8. Serve unstuffed peppers over rice or other base and enjoy!
