Our amazing provider Erika teamed up with her daughter, Abby, to whip up a fun and delicious twist on a classic—deconstructed stuffed peppers!

Be sure to check it out and get inspired to try something new this week! 👩‍🍳

Recipe:
(280 cal each/6-8 servings)

​1-1.5 lbs ground beef or ground turkey
​2 tbsp olive oil
​1 yellow onion, diced
​2 bell peppers, diced
​2 ribs celery, diced
​2 cloves garlic
​2 can diced tomatoes
​2 tbsp tomato paste
​1 ½ cup corn, canned or frozen
​2 tbsp dried basil
​1 tbsp dried oregano
​½ tsp red pepper flakes
​¼ cup parsley (1 tbsp dried)
​Italian seasoning, to taste
​salt and pepper, to taste

1. In a skillet, over medium heat, saute beef in olive oil along with onions, celery, and peppers until veggies soft and beef browned.
2. Add garlic and saute a few more minutes.
3. Add your diced tomatoes and tomato paste.
4. Add all of your seasonings and corn.
5. Saute a few more min, especially if corn is frozen.
6. Turn heat down to simmer a bit longer.
7. Prepare your veggie rice or preferred base as desired.
8. Serve unstuffed peppers over rice or other base and enjoy!

If you're on a weight loss journey, protein is your best friend. It:

✔️ Keeps you full
✔️ Protects muscle
✔️ Supports metabolism
✔️ Reduces cravings

Most women aren’t eating enough protein and it can slow progress.
So how much do you actually need?

A good general guideline is:
• 0.7 – 1 gram of protein per pound of ideal body weight per day
For many adults trying to lose weight, that often equals about 90–130 grams of protein per day. Spread throughout meals for the best results.

Examples of ~25g protein portions:
• 4 oz chicken
• 1 cup Greek yogurt
• 3 eggs + egg whites
• Protein shake
