The Giant Pumpkin Has Been Harvested! 🎃

Grandpa Tom, Dr. Brandon, and the kids rolled up their sleeves this weekend and harvested the seeds from our giant pumpkin — then cut it up to haul away!

We had SO much fun sharing this fall tradition and giant pumpkin with all of you. 🍂

Thank you to everyone who stopped in, snapped photos, brought their families, and enjoyed the pumpkin while it was visiting Lake Country Health Center this fall. ❤️

🔥 Dish of the Week w/ Dr. Murray
Peruvian Chicken w/ Lime-Cilantro Green Sauce

This one is SO flavorful and surprisingly simple. Great meal prep, great summer grilling, and loaded with anti-inflammatory herbs + spices.

🥘 Ingredients

Chicken + Marinade
• 1.5–2 lbs boneless skinless chicken thighs
• 5 garlic cloves (peeled)
• ⅓ cup soy sauce
• 2 Tbsp lime juice
• 1 Tbsp extra virgin olive oil
• 2 tsp cumin
• 1 tsp paprika
• ½ tsp dried oregano
• Black pepper

Green Sauce
• 3 jalapeños (seeded + ribs removed)
• 1 cup fresh cilantro leaves
• 2 green onions (green tops only)
• 2 garlic cloves
• ½ cup mayo
• ¼ cup Greek yogurt
• 1 Tbsp lime juice
• ½ tsp salt
• ¼ tsp black pepper
• 2 Tbsp extra virgin olive oil

👨‍🍳 Directions

Marinate Chicken
Blend garlic, soy sauce, lime juice, oil, cumin, paprika, oregano + black pepper until smooth.
Add to ziploc bag with chicken, seal, refrigerate 8–24 hrs.

Make Green Sauce
Add everything EXCEPT olive oil to blender.
Blend until smooth.
With blender running, drizzle in olive oil.
Refrigerate until serving.

Cook Chicken
Grill, oven, or broil until internal temp is 165°F.
Rest 5–10 minutes (loosely covered), then slice.

Serve chicken drizzled with or dipped in the green sauce.
Pairs amazing with roasted veggies, rice, or salad! 💚
