These little gems of goodness are an excellent source of vitamin C. They are also a good source of fiber, phosphorus and selenium. Raspberries contain anthocyanins and another phytochemical called quercetin, both of which are anti carcinogenic. Raspberries have also been shown to help control blood sugar in diabetics and help prevent liver damage.

These yummies are an excellent source of fiber, vitamins C and K and manganese. Blackberries have been found to have very high amounts of antioxidants. So we think everyone should eat, drink and generally love their veggies more, but we know sometimes it can be hard to fit them into your diet.

Both and (aubergine), can be used as great alternatives to meat in lots of dishes.

You can buy young jackfruit online and to cook, boil it for about ten minutes until it tears apart. You can use the shredded jackfruit in green chili (tacos), in bean chili (hello camping dinner) and with a BBQ sauce (more slaw and BBQ sammies anyone?)

Eggplant can be grilled and then mashed with a potato masher to be made into meatballs (with quinoa, almond flour and seasonings), added to bean burgers or grilled in slices for a hearty addition to lasagne, sandwiches and much more!

So, if you're wanting to get a few extra veggies in your diet, you can always use veggies like these to make that happen in a delicious and nutritious way!
