Thanksgiving Meatballs-Kid friendly - beginning chewer
4 cups of Stove top or Pepperidge Farm seasoned bread cubes
1 cup jellied cranberry sauce
1/2 cup chopped onion puréed in blender
2 garlic cloves add to onion puree & blend
1 lb ground turkey
1 cup diced cooked white potatoes (or sweet potatoes your choice)
1/2 cup chicken or vegetable broth
1/4 cup unsalted butter, melted
1 large egg, beaten
*1 tbls fresh sage, chopped
*1 tbls fresh rosemary, chopped
*1/2 tsp dried thyme
OR substitute * ingredients with 2 tbls Bells poultry seasoning
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
1. Preheat oven to 375F
2. ��Line a baking sheet with parchment paper.�Set aside.
3. ��In a large bowl, combine the stuffing mix, cranberry sauce, potato,
4. ��In another bowl, combine the turkey, broth, egg, melted butter, onion and garlic puree and all the herbs and spices. Add the dry ingredients fold in until the wet ingredients are thoroughly combined. Do not overmix.
5. ��Shape into balls/sticks and place them on the baking sheet. Drizzle well with avocado/olive oil and bake for 20 minutes or until they are cooked through and crispy and golden brown.
