It’s SOUP SEASON! Tell me your favorite below! 🍲🍜🥘
When the temps dip into the 50s and the fall foliage is in full effect, a cozy bowl of soup is my go-to lunch! Soups can be a great prep-ahead meal option that are chock full of good nutrition and customizable for your personal carb tolerance for that ideal blood sugar balance. Do you have to eliminate all noodles, rice, barley, root vegetables, and potatoes in your soup? Nope! Choose soups that balance out these starches with lots of veggies, protein, and healthy fats, and you can always reduce the quantity of the carb source when you’re the chef in charge.
Not sure what soup to make? Here are some of my favorites!
🔸Loaded cauliflower- dress it up like a baked potato with bacon bits, cheddar cheese, and scallions
🔸Creamy tomato- a classic recipe that you can make more fun with toppings or kale chips from
🔸Broccoli cheddar- get your daily dose of greens right here
🔸Chicken tortilla- use a rotisserie chicken to pull this one together really quickly
🔸Beef vegetable- add bell peppers, carrots, green beans, tomatoes, really any vegetable will do!
🔸Turkey white chili- white beans act as a good source of protein and complex carb in this hearty bowl
Did you know that eating an evening snack with some carbohydrate may help with fasting blood glucose numbers? 😱🤩
Aim for an evening snack that has :

✔️protein 🧀
✔️fat 🧀
✔️fiber 🥒
