This is so well put! Something I suggest to my clients, is to look at their meal and ask, "How can I add a plant to this?" Anything for the plant kingdom counts. From herbs/spices to seeds!

For decades, I’ve been teaching to “eat the rainbow,” but more specifically, there is a reason why we need each color.

As I explained in the Journal of Nutrition and Metabolism in 2019, there is a “code” or a “functional signature” of each color. If you miss a color in the daily diet, you could be missing out on a function of the phytochemicals in that color of food.

Color is one of the first places to start with eating. It’s the way to get phytochemicals without thinking about it. It’s a way to become nourished without counting calories.

This is how I used some of last week's Sonshine Acres produce. Sautéed the yellow zucchini in a little garlic and olive oil. Boiled the peas briefly, then combined them with the zucchini, added a fluffy baked potato and Mahi Mahi...and called it dinner.

Of course! So glad to see this study. Eating organic foods used to be dramatically more expensive. Now, the difference is not much at all. Organic animal products are still much higher, but if we eat smaller amounts of animal products (and eat more plants) it can even out the cost difference.

Eating organic foods free from pesticides is strongly correlated with a dramatic reduction in the risk of cancer, according to a groundbreaking study published today in an American Medical Association journal.
