Easy Red Wine Pot Roast
A rich, comforting one-pot classic that’s full of flavour and perfect for cozy nights in!
Ingredients:
🥩 3–4 lb beef chuck roast
🧂 Salt & black pepper
🫒 2 tbsp olive oil
🧅 1 large onion, sliced
🧄 4 cloves garlic, smashed
🥕 3 carrots, chunked
🥔 3–4 potatoes, chunked
🍅 2 tbsp tomato paste (optional)
🍷 1 cup dry red wine
🥣 2 cups beef broth
🌿 1 tsp dried thyme (or 2 sprigs fresh)
🌿 1 tsp dried rosemary (or 1 sprig fresh)
🍃 1–2 bay leaves
Instructions:
✅ Season & sear: Pat roast dry, season with salt and pepper. Heat oil in a large pot or Dutch oven and sear on all sides until browned.
✅ Remove and set aside.
✅ Build flavour: Add onion to the same pot and cook 2–3 minutes. Add garlic and tomato paste, stir for 30 seconds.
✅ Deglaze: Pour in red wine, scraping up the brown bits. Simmer 2–3 minutes.
✅ Braise: Add beef broth, herbs, bay leaves, carrots, potatoes, and return the roast to the pot. Liquid should come halfway up the meat.
✅ Cook low & slow:
• Oven: Cover and bake at 325°F (165°C) for 3–3.5 hours
• Stovetop: Simmer covered on low for 3 hours
• Slow cooker: 8 hours on low or 5 hours on high
Remove bay leaves, shred the meat, and spoon the sauce over everything.
