Cozy up this winter with a simple, mild chickpea curry that is perfect for sharing at a potluck or enjoying during a quiet evening at home. It is warm, comforting, and easy to prepare. 🥘

Simple Mild Chickpea Curry

Ingredients:
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 tablespoon mild curry powder
1 teaspoon ground cumin
2 cans chickpeas, drained and rinsed
1 can diced tomatoes
1 cup coconut milk
Salt and pepper to taste
Optional: fresh spinach or chopped cilantro and fresh chilis

Directions:
1️⃣ Heat olive oil in a large pan over medium heat. Add diced onion and cook until softened.
2️⃣ Stir in minced garlic, curry powder, and cumin. Cook for 1 minute until fragrant.
3️⃣ Add chickpeas, diced tomatoes, and coconut milk. Stir well and bring to a gentle simmer.
4️⃣ Let simmer for 15 to 20 minutes, stirring occasionally. Add spinach if desired and cook until wilted.

We had a shamrockin’ good time at our St. Patrick’s Day celebration here at Garden Way Retirement Community! 🍀💚
Our talented chef prepared a delicious traditional Irish meal that brought everyone together for a cozy and festive dinner. Residents enjoyed classic Guinness 🍺 and fun grasshopper drinks, adding a little extra cheer to the evening!
And of course, no St. Paddy’s Day would be complete without a special visit from a mischievous leprechaun ☘️✨—he made his rounds sharing a bit of his “gold” and plenty of smiles with everyone!
It was truly a night full of laughter, good food, and great company. We’re so lucky to celebrate moments like these together! 💛
