I’d love to know what you’re experimenting with growing this year? This year we are experimenting with 5 varieties of corn from the Andes. They are reaching high, trying to put in the energy for making the “fruit” or the actual corn cob, which takes over 120 days. Let’s cross fingers that it produces!

What is your fav summer time mocktail!? I love to whip up hibiscus cooler: simply steep dried hibiscus flowers and mint leaves in a few cups of boiled water. After 45 minutes, filter the liquid, add ice, orange juice or any juice, and plain sparkling water!!

What to do with all that zucchini and summer squash?
Make a wonderfully nutritious and simple summer squash soup!
Zucchini and squash soup 

Up to 6 zucchini/squash, roughly diced 
1.5 onions diced
6 cloves garlic, roughly minced
2 to 3 potatoes, diced into 1.5-2 inch chunks 
3 celery ribs, roughly minced 
Fresh Thyme, oregano, and parsley (handful each), chopped  
Enough Water to cover 
Redmond real salt, to taste (around a tablespoon)
Black pepper 

1/4 cup + Butter or olive oil for sautéing 

Preparation

Simply dice and minced all the veggies and herbs.
Ok medium heat, Sauté onion and celery in a Dutch oven or large soup pot, until the onion is nearly clear. Then add the garlic, and sauté for 4 minutes. Then add the herbs and potatoes. After a few minutes add the zucchini/squash.
Cover with water and then top with lid. Bring to boil, then reduce to simmer for 15-20 minutes!

Serve with chick peas and/or any favorite protein.
Feel free to use an emersion bender to make it more creamy.
