Vegetable Dip

Ingredients
- 1 package frozen chopped spinach, thawed & drained (10 oz)
- cup fresh onion, minced
- 2 cups plain lowfat yogurt
- assorted raw vegetables for dipping

Preparation

In a medium bowl combine all ingredients (except raw vegetables for dipping).

Cover and refrigerate until ready to serve.

Serve as a dip for raw vegetables.

Makes approximately 3 cups.

Curried Lamb Tarts

Ingredients
- 2 tbsp vegetable oil
- 1/2 tsp cumin seeds
- 2 cloves of garlic, minced
- 1/2 inch piece of ginger, minced
- 1 medium onion, finely chopped
- 6 whole canned plum tomatoes, lightly drained and pureed
- salt to taste
- 1 tsp each: ground coriander, ground cumin, dried fenugreek leaves (kasoori methi), garam masala
- 1/2 tsp each: turmeric, cayenne pepper
- 2 tbsp each: sour cream, chopped fresh coriander
- 1 lb. lean ground lamb
- 1 cup each: frozen peas, crumbled feta cheese
- 1 frozen pie shell or several small frozen tart shells, thawed

Preparation

Warm oil in a non-stick skillet over medium high heat.

Add the cumin seeds and after a few seconds, add the minced garlic and ginger.

Saut for 30 seconds, then add the chopped onions. Saute them for 8 minutes, until they are lightly browned.

Reduce heat to medium and add the tomatoes. Cook them for 5 minutes, stirring occasionally.

Add all the spices and salt.

Add the sour cream, stirring constantly for 2 minutes.

Add the lamb to the skillet. Brown it for 5 minutes, mixing it constantly and breaking up all the lumps.

Add the peas and cook for 15 minutes, stirring occasionally.

There should be no liquid left in the lamb mixture at the end of cooking time.

Stir fry it for a few minutes longer if necessary and increase heat to medium high.

Mix in the fresh coriander leaves and crumbled feta. Cool and reserve this topping.

You can also make this up to 3 days ahead of time and keep it refrigerated until needed.

Preheat oven to 350F.

Place pie or tart shells on a baking sheet.

Fill generously with prepared warm lamb topping, tamping down slightly to even it out.

Top with additional crumbled feta if desired.

Bake 20-25 minutes until pastry is cooked and golden.

Cool slightly and serve.

Garbanzo Beans & Greens

Ingredients
- 3 strips bacon
- 1 cup chopped carrots (about 3 medium)
- 1 medium onion, chopped
- 2 garlic gloves, minced
- 1 teaspoon smoked paprika
- 1/4 teaspoon kosher salt
- 1/2 teaspoon cumin
- 1/2 teaspoon crushed red pepper
- 4 cups vegetable broth (depending on desired thickness)
- 15 oz. cans garbanzo beans, drained
- 4 cups kale (or other hearty green), chopped or torn

Preparation

Cook bacon in a Dutch oven or soup pot on medium heat.

Remove bacon with tongs and leave fat.

Alternatively, just heat olive oil or olive oil/butter combo in pan.

Crumble bacon and set aside.

Add chopped carrot and onion to bacon fat (still over medium heat).

Cook for about 4-5 minutes, stirring.

Add garlic and stir for a minute or so longer.

Add paprika, salt, cumin and crushed red pepper and stir for about 30 seconds.

Turn up the heat and add broth and beans.

Bring to a boil.

Reduce to a simmer and cook for 20 minutes, stirring every now and then.

Add kale and cover the mixture and simmer for about 10 minutes.

Sprinkle in bacon crumbles (if desired) and stir.

Top with desired toppings.

Serve with pita, naan or crusty bread for a delicious meal.

Triple Chocolate Whoppers

Ingredients
- 6 ounces high quality semisweet baking chocolate, such as Valrhona or Callebaut, chopped into large chunks
- 2 teaspoons baking powder
- 3/4 cup brown sugar
- 2 oz. unsweetened chocolate chopped into large chunks
- 2 eggs
- 1 teaspoon tablespoons plus 2 instant espresso powder
- 1/2 cup of chopped pecans
- 1/2 teaspoon sea salt
- 1 cup semisweet chocolate chips
- 1/2 cup all-purpose unbleached flour
- 1/2 cup (1 stick) cold unsalted butter, cut into Β½ inch cubes
- 1 teaspoon pure vanilla extract
- 1 cup coarsely chopped walnuts

Preparation

Preheat the oven to 325 degrees F (163 degrees C).

Lightly grease 2 baking sheets. Set aside.

Combine semisweet chocolate, unsweetened chocolate chunks, and butter in a double boiler.

Melt the chocolate over low heat until just melted, stirring occasionally.

Be careful not to burn the chocolate. Remove immediately.

Stir to blend the butter and chocolate off the heat, and set aside.

Combine the eggs, espresso powder, and vanilla extract in a large bowl and cream together using an electric mixer.

Add the brown sugar and mix until creamy.

In a separate bowl, sift together the flour, baking powder, and sea salt. Set aside.

Add the melted chocolate and butter to the egg mixture and blend together using an electric mixture.

Then add the flour mixture and stir by hand just until the dry ingredients are moist.

Add the chopped nuts and the chocolate chips to the chocolate and flour mixture, folding them in gently. The dough will be relatively soft.

Drop by large tablespoonfuls onto the greased baking sheets at least 3 inches apart.

If you want the cookies to look uniform in size then use a 2 oz. cookie or ice cream scoop.

Bake immediately to prevent the chocolate from hardening for 10 to 12 minutes.

Rotate the pan halfway through the baking time.

The cookies will still be very soft and sticky inside, but do not overcook the cookies or they will be crispy, rather than chewy.

Cool for 10 minutes on the baking sheets before gently removing the whoppers to a baking rack to cool completely.

Store the cookies in an airtight container separating the layers with wax paper.

Makes about 1 dozen 3-inch cookies.

Avarakkai Paruppu Curry Recipe

Ingredients
- 1 cup Avarakkai / broad beans, chopped lengthwise
- 2 green chillies, slitted
- 2 tbsp coriander seeds
- 1 tsp cumin seeds
- 1 tbsp Jaggery
- small lemon size tamarind
- 1 tsp mustard
- 3 tsp oil
- Β½ tsp peppercorns
- salt, as needed
- 2 tomatoes, finely chopped
- Β½ cup Toor dal
- ΒΌ tsp turmeric powder

Preparation

Wash avarakkai (broad beans), remove the strings on both sides, and cut into medium long pieces.

Cook on stove top or pressure cook for three whistles.

Once done, drain the water and keep cooked avarakkai.

Keep the water to use in kuzhambu or use the water to soak tamarind.

Pressure to cook dal and keep aside.

Heat a pan, add tsp of oil and roast the ingredients given under β€œto roast and grind”.

Let the tomatoes cook completely.

Cool them and process it in a mixer adding enough water to fine paste.

Heat a pan, add oil , once heated add mustard seeds, then add tamarind water.

After it starts boiling, add cooked dal, jaggery, salt, turmeric powder and grinded masala.

Allow it to cook in medium low flame for 5 minutes.

Now add cooked broad beans.

Let it boil for 4 minutes.

Turn off the flame and add chopped coriander leaves.

Natalie's Strawberry Pie

Ingredients
- 2/3 cup lemon juice
- 1 small container Cool Whip
- 2 Keebler shortbread crusts
- fresh strawberries, chopped
- 2 cans sweetened condensed milk
- 2 teaspoons vanilla

Preparation

Mix the first 5 ingredients together.

Pour into pie crusts.

Refrigerate until time to serve.

Lemon Curd Layer Cake

Ingredients
- 1 fat-free pound-cake or angel loaf cake
- 1 tablespoon cornstarch
- 4 large eggs
- lemon slices for garnish
- 3 large lemons
- 2 1/2 cups (6 ounces) nonfat whipped topping (thawed)
- 1 cup sugar

Preparation

Zest and juice lemons.

Add water, if necessary, to make 1 1/4 cups of juice.

In a medium, heavy-bottomed saucepan, whisk together zest and juice, sugar, eggs, and cornstarch.

Over medium high heat, cook mixture for 4 to 5 minutes, whisking constantly, until thick and bubbly.

Press through a fine mesh strainer into a bowl.

Chill for at least 1 hour.

Place 1/3 of the chilled lemon curd in a mixing bowl and gently fold in the whipped topping. Set aside.

With a long serrated knife, trim the top of the cake, if desired.

3 Minute Chocolate Cake

Ingredients
- 2 tablespoons cocoa
- 1 coffee mug (big size)
- 1 gram egg or use the Ener equivalent
- 3 tablespoons milk
- 3 tablespoons oil
- 4 tablespoons sugar(you can increase this if you wish)

Preparation

Put all the dry ingredients one by one into the mug and mix well.

Then add all the wet ingredients and mix along with the dry ones. Ta-da your mixture is ready!

Now keep the mug inside the microwave in HIGH for just 3 minutes.

Cake is ready.

Do not miss the fun part of the cake rising inside the microwave. It is a treat to watch.

Asian Marinated Chicken Thighs

Ingredients
- 4 bone-in, skin-on chicken thighs
- 1/3 cup canola oil
- 1 tablespoon Asian fish sauce
- 1 tablespoon Asian chili flakes in oil
- 1/4 cup cilantro leaves, finely minced
- 3 garlic cloves, finely minced
- 1 teaspoon sesame oil
- 1 teaspoon grated lemon zest
- 1 teaspoon grated lime zest
- black pepper
- sriracha

Preparation

Stir together all the marinade ingredients.

In a small container, refrigerate 3 tablespoons of the marinade to drizzle over cooked chicken.

Wash the chicken thighs and pat dry with a towel.

For marinating the chicken thighs, place the thighs in either a container with lid or large Ziploc bag.

Pour spicy Thai marinade with cilantro over the chicken and mix well.

Refrigerate at least 4 hours or preferably overnight/24 hours.

Adjust the oven rack to top third, so it's about 8 inches from the top heating element.

On a broiling pan, place the thighs skin side down.

Broil, 16-18 minutes.

Flip the thighs so the skin side is up.

Broil, 12-14 minutes.

Serve with the side of reserved 3 tablespoons of marinade.

Easy Chicken Fajita Enchiladas

Ingredients
- 1 bell pepper
- ΒΌ cup butter
- fajita chicken (fully cooked)
- 4 oz. cream cheese
- flour tortillas
- shredded cheese
- 2 Tbsp sour cream

Preparation

Heat the oven up to 350F degrees.

In a medium pan melt the butter, add the sour cream, and sautΓ© the chicken and bell pepper on medium heat for 5 minutes.

Once the bell peppers have softened up, add in the cream cheese and stir until all is well mixed together.

Use cooking spray to prepare your baking dish.

Take a flour tortilla, add in the chicken and cheese sauce and roll.

Place in the dish and use a toothpick to keep close if needed.

Continue to roll remaining chicken mixture and tortillas.

Top with shredded cheese.

Bake for 10 minutes, or until the cheese is melted.

Remove toothpicks before serving.

Carob Chips Cookies

Ingredients
- 1/4 cup butter
- 1/2 cup raw honey
- 2 tablespoons brown sugar
- 2 organic eggs
- 2 tsp. vanilla extract
- 1 cup white Spelt flour (or whole wheat flour)
- 1 cup wheat germ
- 1 cup SunSpire unsweetened carob chips
- 1/4 tsp. ginger powder

Preparation

Preheat the oven to 350 degrees Fahrenheit.

In a large mixing bowl, beat butter, honey, sugar, eggs, vanilla, flour, wheat germ and ginger powder in a mixer at medium speed for 30 seconds.

Add Carob Chips and combine well.

Drop 2 teaspoons full of dough onto an ungreased cookie sheet with parchment paper on top or a baking sheet on top.

Bake at 350 degrees Fahrenheit for 10 minutes or until slightly brown.

Transfer to a wire rack and let cool.

Roasted Beets And Leeks Pasta Salad

Ingredients
- 3 beets, sliced
- 1 tablespoon butter
- 1 clove of garlic, or more
- Kosher salt
- 1 leek, sliced
- 1/4 cup olive oil
- 2 tablespoons parsley, minced
- 2 teaspoons rosemary, minced
- 2 1/2 cups rainbow rotini pasta

Preparation

Toss beet slices in 1 tablespoon olive oil and rosemary.

Sprinkle it with a bit of salt.

Bake in a preheated 400F degrees oven for 15-18 minutes.

As beets cook, drop butter and remaining olive oil in a wide pan on the stove.

Add leeks.

Cover and allow to cook until they soften and begin to brown, approximately 20 minutes.

Stir occasionally to keep from sticking.

Meanwhile, start a pot of salted water boiling on the stove.

Drop in pasta and cook according to package directions.

Drain and set aside.

Once beets, leeks and pasta are done, mix to combine.

Add remaining rosemary, garlic and parsley and toss well

Seasoned with salt to taste.
