I’ve been doing this nutrition thing for the better part of a decade, not including my four year undergrad degree in dietetics. Busy December nights call for meals that are easy, comforting, and realistic. 🎄
This Chicken Bacon Ranch Casserole checks all the boxes:
✔️ budget-friendly
✔️ protein-packed
✔️ crowd-pleasing
Estimated cost: about $2–3 per serving, depending on portions and store prices.

Preheat the oven to 375. Season and roast 1lb of chicken in the oven for 30 minutes. Let cool and dice. Heat 6 slices of bacon in microwave for 30 seconds. Use half the bag of potatoes to fill a 9x13 casserole dish. Mix chicken, 1 cup of ranch, crumbled bacon bits, and spinach in a bowl. Pour on top of potatoes. Top with 1/2 cup of each cheese. Cover in foil and bake for 20-25 minutes. For an added little razzle dazzle, remove foil and broil for 5 minutes to brown the cheese.

Because fueling your body shouldn’t feel complicated — especially during the holidays. Be sure to save for when you need a low-effort and quick dinner!
