A burst of color, flavor, and nutrients in every bite 🌈🥗This superfood salad is love at first fork!
Ingredients:
- Tuscan kale
- Roasted sweet potato cubes
- Blood orange segments
- Sliced pear
- Pomegranate arils
- Toasted walnuts
- Crumbled goat cheese
- Extra-virgin olive oil
- Fresh lemon juice
- Black pepper
- Honey
Instructions:
1️⃣ Roast sweet potato cubes until tender and lightly caramelized; let cool slightly
2️⃣ Massage kale with a small amount of olive oil until softened
3️⃣ Add sweet potatoes, blood orange segments, sliced pear, and pomegranate arils
4️⃣ Top with toasted walnuts and goat cheese
5️⃣ Whisk olive oil, lemon juice, honey, and black pepper; drizzle over the salad
