Directions
1. Preheat oven to 375°F.
2. Cut 4 sheets of parchment paper, 12 x 15 inches. Set aside.
3. Crush juniper berries using a mortar and pestle or the side of a knife.
4. In a small bowl, combine juniper berries with rosemary, lemon zest, lemon juice, orange zest, orange zest strips, orange juice, grated garlic, and olive oil.
5. Lay the sheets of parchment paper on a clean, dry surface.
6. Divide the marinade with the juniper berries and other ingredients among the 4 salmon slices.
7. Rub the marinade into the top and bottom of each piece.
8. Season with salt and pepper.
9. Place one piece of salmon in the center of each sheet, skin side down.
10. Fold parchment over the salmon, crimp, and tuck under each filet to seal it.
11. Place each salmon packet on a baking sheet and cook in the preheated oven for 20 minutes.
12. To serve, carefully open each packet, allowing steam to escape.
13. Remove the salmon and plate on a dinner plate.
14. Pour juices from the packet over the salmon and garnish with orange slices on the side.
