I added 3 cloves of garlic, a small white onion, salt, and a bit of cumin to this. Blended it up. And boom, chips and salsa perfection.

Did anyone else plant extra squash this year just to make more stuffed squash blossoms?🙂 My first batch is ready for their herbed ricotta filling and my mouth is literally watering right now🤤

I have stuffed these flowers with different cheeses and baked them, grilled them and fried them. Tonight I’m going super simple and lightly frying them in a pan on each side until warm and gooey.

Chimichurri isn’t just for meat! I topped my fave roast cauliflower with it last night and it was amazeballs. I’ve been trying different versions of chimichurri for a while now and this one is less traditional but pretty great.

Chimichurri➿
1 bunch fresh flat-leaf parsley
1 bunch fresh cilantro
1/4 red onion, diced
1 Tbls. Dried oregano
2 cloves of garlic, peeled and crushed
Juice of 1 lime
2 Tbls. red wine vinegar
1/2 tsp sea salt
1/4-1/2 tsp red pepper flakes, to taste
1/2 cup good-quality olive oil

Put all ingredients into a food processor and pulse until desired consistency reached. We found that we like it kind of chunky like salsa but feel free to blend in a blender if you like a smooth sauce.

I swear I make more than just kale salads🤓 but THIS one is really really good. I swear. Double swear in this post seems bad but I promise it’s good!!

My cousin asked me if I had a good recipe for turnips because she had a new crop of them spring up. I was sorry to say I did not so I’ve been brewing on this one for a while. This salad has made me a turnip lover😍 plus, it’s really simple🥰🥰

How you can experience this amazingness👇
Salad:
•1 bunch of kale torn into bite sized pieces and massaged (see my reel on how to do this)
•1 apple sliced thin, I used a Honeycrisp
•1 raw turnip peeled and julienned
•1 cup of pearled barley, cooked

Dressing:
•Juice of 1 ruby red grapefruit
•2 tsp Mirin
•1 Tbls I ice vinegar
•3/4 cup olive oil
•1 Tbls white miso
• 1/8 tsp salt (or to taste)

I like to mix my dressing in a mason jar by shaking it up with the lid on then pouring it over my kale and barley then tossing it until fully covered. Then I add the apple and turnip and gently toss some more.
