Here is a healthy and simple Pumpkin 🎃 soup recipe that’s low in calories
Ingredients:
1 small pumpkin 🎃 , peeled and diced
1 onion, chopped
2 cloves of garlic
4 cups of vegetable broth (low sodium)
1/2 teaspoon ground nutmeg
Salt and pepper to taste
1 tablespoon olive oil
Greek yogurt or low- fat sour cream for garnish (optional)
Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the chopped onions and garlic, and sauté until they become translucent.
2. Add the diced pumpkin 🎃 and continue to cook for another 5 minutes, stirring occasionally.
3. Pour in the vegetable broth, and bring the mixture to a boil. Reduce the heat to a simmer, cover the pot, and let it cook for about 20 minutes or until the pumpkin 🎃 is tender.
4. Use an immersion blender or a regular blender to carefully purée the soup until is smooth and creamy.
5. Return the puréed soup to the pot and season with ground nutmeg, salt and pepper.
6. Heat the soup over low heat until is heated through.
7. Serve the pumpkin 🎃 soup hot, garnished with a dollop of Greek yogurt or low fat sour cream, if desired.
