• 2 tsp baking powder
• ¾ tsp sea salt
• 1 cup unsweetened applesauce
• 2 large eggs
• ½ cup pure maple syrup
• ½ cup avocado oil
• 2 tsp pure vanilla extract (optional)
• 2 tbsp orange zest
• ⅔ cup dried cranberries

Step-by-step guide:
1. Preheat oven to 350°F and line a muffin tin with paper liners.

Warm, creamy, and full of flavor—these Butternut Squash Soup Shooters make a cozy, diabetes-friendly snack or appetizer. Perfect for fall gatherings or a nourishing pick-me-up.

What goes in:
• 1 tbsp olive oil (or butter)
• 1 medium onion, chopped (about 1 cup)
• 4 celery stalks, chopped (about 1 cup)
• 3 garlic cloves, crushed and chopped
• 1 butternut squash (3 lbs), peeled and cubed (about 5 cups)
• 1 tsp sea or Himalayan pink salt
• 2 tsp curry powder
• 5 cups vegetable broth (or broth + water combo)
• 1 cup canned coconut milk
For the garnish: fresh cilantro, cooked chickpeas, crushed red pepper

How to prepare it:
1. Heat 1 tbsp olive oil in a large stock pot over medium heat. Add 1 cup onion + 1 cup celery; cook 4–5 minutes until soft.
2. Stir in 3 garlic cloves and cook for 1 minute. Add 5 cups butternut squash + 1 tsp salt + 2 tsp curry powder. Stir well.
3. Pour in 5 cups vegetable broth and bring to a boil. Reduce to a simmer and cook 25–30 minutes until squash is fork-tender.
4. Stir in 1 cup canned coconut milk, then remove from heat. Blend with an immersion blender until smooth and creamy.
5. Serve warm in shot glasses, garnished with cilantro, chickpeas, and crushed red pepper.

Chilly nights feel warmer with this hearty, diabetes-friendly Turkey & Sweet Potato Chili. Packed with lean protein, fiber, and cozy spices, it’s the perfect comfort food to keep you full and balanced.

Ingredients you’ll need:
• 2 tbsp chili powder
• 1 tbsp ground cumin
• 2 tsp salt
• 1 tsp smoked paprika
• ½ tsp black pepper
• ½ tsp garlic powder
• ½ tsp dried oregano
• 2 tbsp extra virgin olive oil
• 2 lbs (907g) lean ground turkey (92–97%)
• 2 (14-oz) cans petite diced tomatoes, drained
• 1 (7–8 oz) can tomato sauce
• 2 tbsp tomato paste
• 2 cups (480 ml) reduced-sodium chicken broth
• 1 large sweet potato, peeled and diced (~2 cups / 270g)
• ½ cup (65g) diced yellow onion
• 1 large green bell pepper, diced
• 1 (14-oz) can corn, drained and rinsed (or frozen)
• 1 (14-oz) can kidney beans, drained and rinsed
• 1 small jalapeño, minced (seeds removed)

Here’s how to make it:
1. In a small bowl, mix together 2 tbsp chili powder + 1 tbsp cumin + 2 tsp salt + 1 tsp smoked paprika + ½ tsp black pepper + ½ tsp garlic powder + ½ tsp oregano. Set aside.
2. Heat 2 tbsp olive oil in a large skillet over medium heat. Add 2 lbs turkey and cook for 4 minutes. Stir in 2 tbsp of seasoning blend and continue cooking 4–5 minutes until browned.
3. Transfer the turkey to a 6-quart slow cooker. Add 2 cans diced tomatoes, 1 can tomato sauce, 2 tbsp tomato paste, 2 cups chicken broth, 2 cups diced sweet potato, ½ cup onion, 1 green bell pepper, 1 can corn, 1 can kidney beans, 1 minced jalapeño, and the remaining seasoning blend. Stir well.
4. Cover and cook on low for 7 hours or high for 4 hours. Serve hot.
