These Spider Deviled Eggs feature edible black olive spiders for the extra spooky look.
These Deviled Eggs use Greek yogurt instead of your traditional mayo, to increase the protein and decrease the fat. Recipe reimagined!
Weekend baking win!
I gave my Pumpkin Chocolate Chip Muffins a whole-food makeover — and they were a hit with friends!
Ingredients:
Pumpkin Chocolate Chip Muffins (Whole-Food Version)
•4 eggs
•1 cup unsweetened applesauce
•½ cup mild oil (olive, avocado, or coconut)
•½–¾ cup honey
•1 (16 oz) can pure pumpkin (or ~2 cups cooked pumpkin/squash puree)
•1½ cups whole wheat flour (white whole wheat for lighter texture)
•1½ cups oat flour (or finely ground rolled oats)
•2 tsp baking soda
•2 tsp baking powder
•1 tsp cinnamon (or pumpkin pie spice)
•1 tsp salt
•1½–2 cups dark chocolate chips (60%+ cacao)
Instructions:
1️⃣ Preheat oven to 400°F. Line or grease muffin tins.
2️⃣ Whisk eggs, applesauce, oil, honey & pumpkin until smooth.
3️⃣ In another bowl, mix dry ingredients.
4️⃣ Combine wet + dry gently, then fold in chocolate.
5️⃣ Fill muffin cups ⅔ full.
6️⃣ Bake 16–20 min (toothpick should come out clean).
Yields ~24 muffins
