I’ve been loving this chicken dish lately! Chicken breast, sweet cherry peppers, onions, olives, garlic, and top it with parsley and you have a restaurant-style meal within a half hour! I simply sauté the onion, garlic, cherry peppers and olives in a pan, add the chicken and let it caramelize on each side, add some black pepper, and then cover it for about 25 minutes. Sometimes I add a bit of water or low sodium chicken stock to avoid it from sticking! This is so, so flavorful and so healthy! Top it with freshly chopped parsley and you have an amazing meal! 🍗🧄🧅🌶🌿

Around the holidays I always suggest that my patients contribute one healthy option to the table to help them balance out their plate. That’s exactly what I did for this past Thanksgiving! For your next occasion, bring a large fruit bowl, a large tossed salad, or a veggie platter for everyone to enjoy so that you can balance it out with all of the other yummy indulgences! Filling up on these high fiber options will keep you a bit more satisfied and help you to not over-indulge!

Cozy Saturdays call for Protein Pancakes - they’re back! I absolutely love these high protein Cottage Cheese pancakes. I top it with a delicious strawberry compote (frozen strawberries with a touch of stevia and water). These pancakes are so simple to make - Simply mix 1/2 C low fat cottage cheese, 1/4 C oats, 1/2 tsp baking powder, just a touch of vanilla extract, and 4 egg whites. Blend it all together and you have your pancake batter! You can add berries, lemon zest or even a few chocolate chips if you’d like!

We are so thrilled to introduce our newest member of the team - Meet Alexa! 🍎🍏 Hello! I’m Alexa Schneider MPS, RDN. I graduated from William Paterson University with my Bachelors of Science in Public Health in 2018. In 2019, I completed a Nutrition and Healthy Living 6-month certificate program with Cornell University.
Shortly after, I began my masters and dietetic internship with Penn State University. I completed my dietetic internship with Penn State University and graduated with my MPS of Nutritional Sciences in April of 2022. During my internship, I worked in a variety of settings within Harrisburg, Pennsylvania, and the surrounding areas. These settings allowed me to work with many patients, communities, and individuals from various backgrounds, within the clinical, food service, and community nutrition settings.

My passion for nutrition started at a young age. Many can be consumed by diet-culture, and I, myself have fallen victim to that cycle. I am here to help individuals break this cycle and embrace food freedom with a mindful approach. I strive to support others in implementing this mindset into their lives. When I am not working, I enjoy spending time with my family and friends, traveling to anywhere with a beach, and trying new restaurants with my friends, especially new brunch spots!

My scope of practice includes: Intuitive Eating, Mindful Eating, Eating Disorders, Chronic Dieter, Weight Inclusive (WI), Cardiometabolic Disorders, and, Children and adolescents.

Garlic Roasted Branzino with Sautéed Cauliflower, Mushrooms and Onions! So delicious and simple - I love preparing all types of fish in tin foil and throwing it in the oven for 15 minutes. You can add any spices or herbs but I kept it super simple with lots of chopped garlic, salt and pepper!

Made such a delicious and light fish last night! I made Filet of Sole with lemon, garlic and parsley. So simple. I just brown some chopped garlic in the pan and pan sear the Sole in the pan on each side for about 5 minutes (and sprinkle with a little salt and pepper). Once the fillets are cooked through I top it with some sliced lemon and fresh parsley! Serve it with lots of veggies, a salad and some roasted potatoes and you have yourself an amazing meal! Filet of sole is so light and not fishy so if you’re not a fish eater this may be a good one to start out with! YUM! 🍋🐠🌿

My newest OBSESSION! I am a Registered Dietitian and I eat ice cream every night 🍦 Yes, you heard me right! I just bought the new Ninja Creami and I am absolutely obsessed! I simply mix together a scoop of protein powder (I used ) , unsweetened almond milk, a bit of monk fruit and 5 minutes later you have the most delicious ice cream! I typically top it with some yummy toppings (here I have Hu chocolate chip cookies crushed on top). This couldn’t make me or my sweet tooth happier!

This may look crazy but this was such a DELICIOUS dinner! Made a Homemade Turkey Breast the other night and it couldn’t have been any easier! You simply rinse off the Turkey breast, season it with black pepper and fresh chopped onions (I also add lots of onion powder to give it extra flavor). You follow the directions on the back of the packaging in terms of how long it must cook in the oven (this cooked for about 2.5 hours on 350 degrees) and the house literally smelled like Thanksgiving! The Turkey makes for great left overs throughout the week to throw over a salad or on a wrap for lunch. I prepared it with lots of roasted veggies and a salad. So good! 🍗🍴

With the weather changing there’s been lots and lots of soup in our home this week! This is such a simple recipe and soothes the soul (and throat) this time of year! Simply simmer a gallon of water, 1/2 bouillon cube, 4-5 boneless skinless chicken breast, approximately 4 carrot stalks, 4 celery stalks, 3 parsnips, one large onion chopped, a large handful of parsley and dill and a tiny bit of salt and pepper. Let it cook up for 3 hours (the more the better!) and your house will smell amazing and you’ll have an amazing meal to look forward to! Enjoy! 🥣🧅🥕🌿
