One of my favorite kale quinoa chickpea salad.Find the recipe below :
INGREDIENTS:
1.1/2 bunch of kale(cleaned and chopped)
2.1 canned chickpeas(rinsed)
3.1/2 cup cooked quinoa
4.2-3 cloves of garlic chopped
5.1 medium onion chopped
6.1 red and 2 yellow pepper chopped
7.1 medium tomato chopped(de-seeded)
8.Salt and black pepper to taste
9.1/2 tsp ground cumin
10.1/2 chilli lime seasoning
11.1/4 tsp red chill pepper (optional)
12.Squeeze some lemon for extra tanginess
13.Handful of chopped mint leaves.
14.1 tsp-2 tsp olive/avocado oil

1.Heat the pan and add little bit of olive oil then add garlic.
2.Once it is brown add onion and sauté it for 3-4 mins till it turns translucent .
3.Add all the spices mentioned in the ingredient list and fry it for 1-2 mins and then add the kale.
4.Mix it well and cover the mixture with lid and put it on medium-low heat and allow the kale to soften up.
5.Once kale is done add chickpeas and quinoa and mix it well and turned off the heat.Check the seasoning and make it according to your taste.
6.Add the peppers, tomato and mint and squeeze some lemon.
7.Your salad is ready.

Every time I go for Run I want to be better version of myself.Finally i was able to bring my time down from over 30 mins...

Every time I go for Run I want to be better version of myself.Finally i was able to bring my time down from over 30 mins to 28 mins in 5k.

Stay motivated, keep pushing hard and Don't forget to warm up before Run.Believe me it would help you run better.

9:00 was my average pace which i brought it down from 9:24 :-)

Roasted veggies chickpea salad.

Roast the seasoned vegetables in oven for 35 mins at 425 F

Add chickpeas and lunch is ready.

Seasoning ( salt,peppers, dried basil, cumin, red chilli lime seasoning with spray of garlic avocado oil) and squeeze lemon juice before serving

Eat healthy stay healthy and exercise 🤩

Spices added: chili lime seasoning, salt,pepper,roasted cumin powder with some lime juice and spray some avocado oil to moist the leaves and vegetables.
