🧂 Ingredients
For the filling:

1 lb (450 g) ground beef

½ medium onion, finely diced

2 cloves garlic, minced

1 tsp salt

½ tsp black pepper

1 tsp chili powder

½ tsp cumin

½ tsp smoked paprika

1 cup shredded cheese (cheddar, Monterey Jack, or a Mexican blend)

For the red enchilada sauce:

2 tbsp vegetable oil

2 tbsp all-purpose flour

3 tbsp chili powder (adjust to taste)

2 cups beef broth (or chicken broth)

6 oz (170 g) tomato paste

½ tsp cumin

½ tsp garlic powder

½ tsp onion powder

½ tsp oregano

1 tsp sugar (optional, to balance acidity)

Salt to taste

For assembling:

10 small corn or flour tortillas (6-inch)

2 cups shredded cheese (for topping)

Chopped fresh cilantro, diced onions, or sliced jalapeños (optional garnish)

Make the red sauce:

In a saucepan, heat oil over medium heat.

Stir in flour and cook 1 minute to form a light roux.

Add chili powder and cook 30 seconds more (this releases flavor).

Whisk in broth, then stir in tomato paste, cumin, garlic powder, onion powder, oregano, and sugar.

Simmer for 10–15 minutes until slightly thickened.

Cook the filling:

In a skillet over medium heat, cook ground beef and onion until browned.

Drain excess fat.

Add garlic, salt, pepper, chili powder, cumin, and paprika.

Stir in 2–3 tbsp of the red sauce for moisture. Remove from heat and mix in 1 cup shredded cheese.

Prepare tortillas:

Warm tortillas briefly (10–15 seconds per side) on a dry skillet or microwave them covered with a damp paper towel — this prevents cracking when rolling.

Assemble the enchiladas:

Spread ½ cup of the red sauce on the bottom of a greased 9x13-inch baking dish.

🧂 Ingredients
For the crust:

1 lb (450 g) pizza dough (store-bought or homemade)

1 tbsp olive oil

1 tbsp cornmeal (optional, for dusting)

For the toppings:

½ lb (225 g) breakfast sausage (pork or turkey), crumbled

4 slices bacon, cooked and crumbled

2 cloves garlic, minced

1 cup shredded mozzarella cheese

½ cup shredded cheddar cheese

¼ cup grated Parmesan cheese

3–4 large eggs

1–2 tbsp chopped green onions or chives (optional)

Salt & black pepper to taste

Red pepper flakes (optional, for a little kick)

🔪 Directions

Preheat oven:
Heat to 475°F (245°C). If you have a pizza stone, place it in the oven while preheating.

Cook the meats:

In a skillet over medium heat, cook the sausage until browned. Drain and set aside.

Cook the bacon until crispy, then crumble it.

Sauté the garlic briefly in ½ tbsp of the bacon fat (about 30 seconds — don’t burn it!).

Prepare the crust:

Roll out the dough on a floured surface to your desired thickness.

Transfer to a parchment-lined baking sheet (or preheated stone).

Brush lightly with olive oil.

Assemble the pizza:

Sprinkle half the cheeses evenly.

Add cooked sausage, bacon, and garlic.

Make 3–4 small “wells” for the eggs.

Crack an egg into each well.
