Sunday Morning Waffles – Gluten-Free & Vegan
There’s something special about starting a Sunday morning with a wholesome homemade breakfast. I recently got a new “healthy” GreenPan waffle maker and couldn’t wait to try these simple gluten-free, plant-based waffles.
They turned out perfectly crispy on the outside, soft on the inside, and naturally sweet. Made with whole rolled oats, bananas, and flaxseeds, they offer a beautiful balance of nourishing whole grains, plant protein, and omega-3 fatty acids. It’s the kind of breakfast that feels comforting and satisfying while still being deeply nourishing for the body.
The kids loved them, and honestly they’re so much better than anything from a frozen box. I love topping them with fresh seasonal fruit and sliced bananas for a simple, wholesome start to the day.
Here’s the recipe:
Ingredients
• 3 cups gluten-free rolled oats
• 3 ripe bananas
• 1 cup coconut milk (I like Native Forest) or almond milk
• 1–2 Tbsp flaxseeds
• Pinch of Himalayan salt
• 1 tsp vanilla extract or ½ tsp cinnamon
• ½ tsp baking soda
Directions
1. Preheat your waffle iron.
2. Add all ingredients to a high-speed blender and blend until smooth.
3. Pour batter into the waffle iron and cook until golden and crisp.
4. Serve warm with fresh seasonal fruit and sliced bananas.
