This past week, children, community, and staff gathered in a powerful way to connect with Mother Earth. The "Where Plants and People Speak" event was a huge success and we could not have done without the support of our staff and community.

Thank you to the organizations, community members, and local school districts for taking time to join us.

A special shoutout to our Garden Coordinator, Michelle Pipkin, for having a vision and bringing it to life!

We hope to bring this event back again!

Protect Your Body with Dandy Dandelion

Dandelion greens are a resilient gift from the earth, long cherished in Native American foodways for their healing properties.

A true "bitter medicine," these greens are nutritional heavyweights packed with vitamins A,C, and K. For those managing diabetes, they are particularly vital: dandelions contain bioactive compounds that help improve insulin sensitivity and lower blood sugar. Their natural diuretic effect also supports kidney health, a common concern in metabolic wellness.

In early Spring, they can be made into salads, pesto and sautes. In Fall, they can even be prepared into an antioxidant rich coffee alternative to aid glycemic control!
