🥣 Warming Root Vegetable & Ginger Soup
Warm up from the inside out with this nourishing winter soup. ❄️🍲
Grounding, comforting, and perfect for supporting your energy during the Yin season.

Ingredients:
-2 carrots, chopped
-2 parsnips, chopped
-1 sweet potato, peeled + diced
-1 small onion, diced
-2 cloves garlic, minced
-1 Tbsp grated fresh ginger
-1 Tbsp olive oil
-4 cups vegetable broth
-1/2 tsp turmeric
-Salt + pepper to taste
-Optional: coconut milk, fresh parsley

Instructions:
1. In a pot, sauté onion, garlic, and ginger in olive oil until soft.
2. Add carrots, parsnips, sweet potato, turmeric, salt, and pepper.
3. Pour in broth and bring to a boil.
4. Reduce heat and simmer 20–25 minutes, until vegetables are soft.
5. Blend until smooth (or leave chunky if preferred).
6. Add a splash of coconut milk if you want extra creaminess.
7. Top with parsley and enjoy warm.

Marie Healy L.Ac.

Acupuncture Healing Arts Center was created in 2001 in Longmont, CO by Marie Healy, licensed Acupuncturist and graduate of Southwest Acupuncture College in Boulder, CO with a Masters in Science & Oriental Medicine. Marie is a Massage Therapist since 1994 when she graduated from Finger Lakes School of Massage in Ithaca, NY. She has training in Cupping, Moxabustion, Shatsu, Tui Na, Reiki, Craniosacral Therapy, Homeopathy and utilizes aromatherapy & flower essences in her treatments. Since 1998 Marie has been training Reiki Practitioners and Magnified Healing students and as of 2016 has been training Massage Therapists in Cupping Therapy CEU courses for NCCTMB. Marie’s specially is treating musculoskeletal injuries, athletic performance, pain syndromes, fertility and allergies. She is trained in Battlefield Acupuncture a technique created to work with PTSD and pain for the military.
