At Partner In Health we do more than just adjustments. We encourage and educate our patients on living healthy lifestyles. I would like to start sharing recipes with you that are staples in my household. We will start off the week with this super simple cucumber, tomato salad.
🥒2 English or 4-5 mini cucumbers
🍅6 ounces cherry tomatoes
🥒2/3 cup feta cheese
🍅2 tbsp fresh dill
🥒3 tbsp olive or avocado oil
🍅Squeeze of lemon to taste
🥒Salt and pepper to taste
Chop the cucumbers and dill and mix the ingredients together! This becomes more delicious as it sits. I like to use as many organic ingredients as I can find with an emphasis on the “Dirty Dozen”.
I served mine with braised lamb and mashed potatoes this weekend.
