Quinoa Salad - (E)

Fantastic as an E side to grilled chicken or fish. To make this a full meal all you need to do is add diced chicken breast or salmon. Perfect to take to picnics and parties. You’ll have an option to stay on plan but everyone else will love it too.

Serving Size: Family-serve; Serves 6 to 8

INGREDIENTS:
*3 cups quinoa (cooked and cooled)
*2 diced tomatoes
*1 diced cucumber
*1/3 cup fresh, chopped parsley
*2 minced garlic cloves
*Juice of 1 lemon
*1 Tablespoon extra virgin olive oil
*3/4 teaspoon Mineral Salt
*Sprinkle black pepper

INSTRUCTIONS:
*Mix all the ingredients in a large bowl and chill for 1 hour so that flavors meld.

RECIPE NOTES:
Quinoa cooks up quickly – 12 to 15 minutes. One cup dry yields about 3 cups cooked. For every cup of dry grain, you add 2 cups water or broth. Once it reaches the boil. Turn to low, put that lid on tight and allow to heat and fluff. It’s a good idea to make up larger batches … whatever you don’t use for a meal can be stored in the freezer in zippies in 3/4 cup servings for E needs.

Bangin' Ranch Drums - (S)

This recipe is found in the "Oven-Baked or Roasted Meats" section of our Trim Healthy Mama Cookbook.

Serves: 6-8

Ingredients:
*1/2 cup mayonnaise
*1/2 cup 0% Greek yogurt
*2 tsp garlic powder (or 3 minced garlic cloves)
*1 Tbsp minced onion (dried)
*2.5 tsp mineral salt
*1.5 tsp black pepper
*1 Tbsp parsley (dried)
*6 lbs chicken legs (thawed)

Instructions:
*Preheat the oven to 375°F.

*Mix the mayonnaise and yogurt in a bowl. Add the seasonings and mix well.

*Put the chicken drumsticks in 2 large shallow, well-greased baking pans. Put half of the mayonnaise mix in each pan and, using your hands, coat the chicken well with the dressing.

*Bake, uncovered, for 45 to 50 minutes.

Singing Canary - (FP)

If you’ve been diagnosed with adrenal fatigue, you’ll want to make this drink a daily staple. If you are fighting a cold or need a battery recharge - drink the Singing Canary. This beverage has no caffeine, it contains only ingredients that together create a delicious ADRENAL REVIVER! It contains 1 teaspoon of adrenal rebuilding, inflammation-fighting turmeric powder. This is a single-serve recipe that makes 1 full quart to be sipped on all day. Recipe can be doubled for a 2-quart sipper!

Serves: 1

Ingredients:
*2 lemons
*12 oz water (plus more the jar)
*1 tsp turmeric (1/2 -1 teaspoon ground; as needed)
*1 tsp THM MCT oil (or 1/2 tsp extra-virgin coconut oil)
*1 tsp THM Pristine Protein Powder (or THM Integral Collagen, or both)
*2 generous pinches mineral salt
*1 spashes vanilla extract (1-2 splashes)
*2 doonks THM Pure Stevia Extract Powder (2-4 doonks THM Pure Stevia extract, or 2 to 3 tsps THM Super Sweet Blend, to taste)
*optional: 3 drops essential lemon oil (3 to 4 drops)
*optional: 2000 mg Vitamin C Powder
*ice cubes

Instructions:
*Peel the yellow rind off the lemons using a sharp paring knife, leaving as much of the white pith as possible (bioflavonoids in the pith are a healing component). Slice each lemon into 4 chunks, remove the seeds, and throw the lemon pieces into your blender along with the water. Blend well. Strain the mixture through a fine sieve or nylon mesh bag into a bowl or pitcher. (You can purchase these bags at a paint store inexpensively.) If you are pressed for time, just use the juice of the lemons and don’t worry about the straining.

*Pour the strained juice into the blender. Add all the other ingredients except the ice cubes, and blend really well.

*Fill a quart jar with ice to the tippy top and then pour the blended lemon mixture over the ice. If it doesn’t reach the top, add remaining water until it does. Put a tight lid on the jar and shake it like you are a professional drink mixer. Uncap and adjust the flavor to “own it.” (Quite a bit of stevia is required to offset the strong tart effect of the lemon pith and turmeric and to balance the salt. If your Canary has too much bite, add more sweetener and/or vanilla and scale back on the turmeric next time.)

RECIPE NOTES:
Certain lemons have stronger flavored pith than others. If you find using all the white from your lemon is causing too bitter a taste in your drink, you can use only the juice from your lemons. You’ll be missing out on the bioflavonoids which make the vitamin C more easily absorbed so make sure to use a buffered, vitamin C ascorbic powder that contains bioflavonoids.

Note for pregnant women - Turmeric is considered safe during pregnancy when consumed as a food. There is some concern that it may possibly stimulate the uterus to cause contractions when used as a supplement however ginger has similar properties and concerns and it is often suggested by doctors to treat morning sickness for pregnant women. It is common for 3 teaspoons of turmeric to be suggested as supplement dosage. We think the 1 teaspoon in the Canary is a safer dose for pregnant women as that is the amount that people in India consume on average through food. But, we are not doctors. Each pregnant mama should consult the advice of her physician. If concerned, pregnant women can always reduce the amount of both Turmeric and Vitamin C to 1/4 dose or not drink the full two quarts per day just to stay on the cautious side. The full dose of vitamin C is not recommended for pregnant women.
