Ingredients
1 lb ground Italian sausage (sugar-free, nitrate-free if possible)
4–5 slices bacon, chopped
1 small onion, diced
3 cloves garlic, minced
3–4 cups cauliflower florets (instead of potatoes for lower glycemic impact)
4 cups chicken broth
1 cup full-fat coconut milk
2 cups chopped kale
1–2 tbsp olive oil (if needed)
Salt and pepper to taste
Optional: red pepper flakes for heat
Instructions
1. In a large pot, cook bacon until crisp. Remove and set aside.
2. In the same pot, brown the sausage. Remove and set aside with bacon.
3. Sauté onion in the drippings until soft, then add garlic and cook 1 minute.
4. Add cauliflower and chicken broth. Simmer 10–15 minutes until tender.
5. Stir in coconut milk, sausage, bacon, and kale. Simmer 5 more minutes.
6. Season with salt, pepper, and red pepper flakes to taste.
