You are going to love these Overnight Breakfast Enchiladas!

Overnight breakfast recipes like this are so easy and you get it all ready the night before and then stick it in the oven and relax in the morning.

Family and friends are going to love having festive breakfast enchiladas for weekends, holidays and brunches.

INGREDIENTS

•8-10, 8” keto or low carb “flour” tortillas. Like Mama Lupe Low Carb Tortillas
•1 lb ground breakfast sausage, or you can use ham, ground turkey, bacon or a combination
•10 oz can diced tomatoes & green chiles
•2 Tbsp. grass-fed unsalted butter
•2 cups Monterey Jack cheese, Pepper Jack or cheese of choice
•1O large eggs, beaten
•1 cup half & half
•1 cup sour cream
•Himalayan salt and pepper, to taste

INSTRUCTIONS

•Spray a 9×13 cooking dish with non stick cooking spray. Set aside.
•In a large skillet, add butter and brown ground sausage until there is no more pink. Stir in diced tomatoes and chiles. Pour sausage mixture from skillet into a large mixing bowl. Let cool.
•Add 2 cups cheese and combine with sausage.
•Add about 1/3 cup of the sausage mixture to the center of each tortilla. Roll tortillas up tightly and place seam side down in casserole dish.
•Whisk together eggs, half & half, sour cream, salt and pepper.
•Pour egg mixture over rolled tortillas.
•Cover tightly with foil and store in the refrigerator 30 minutes to overnight.
•Remove from refrigerator. Allow the refrigerated dish to sit for a bit to take the chill off before popping it in a hot oven.
•Preheat oven to 350F.
•Bake covered with foil for 35 minutes. Remove the foil and sprinkle shredded cheese over the top. Bake for 10-15 minutes more or until egg mixture is set.
•Serve with salsa, sour cream, avocado or cilantro.

Christmas is just around the corner. And with that, it’s time to think about planning your Christmas dinner.

Try these delicious Garlic, Bacon & Cream Mushrooms! A fabulous mushroom recipe prepared with butter, garlic, bacon & cream.

Everyone needs a go-to mushroom recipe and this one should definitely be yours. Served as a side dish or a starter.

INGREDIENTS

•6-8 slices sugar-free bacon, cut into strips
•4 Tbsp. grass-fed unsalted butter
•2 Tbsp. olive oil
•6 garlic cloves, minced
•1 lb. small button mushrooms, rinsed and patted dry with paper towels
•1/2 tsp. chili flakes, or to taste
•1/2 tsp. sweet paprika, or to taste
•1 tsp. fresh thyme, chopped
•Himalayan salt and fresh cracked pepper, to taste
•1/4 cup chicken broth
•1/2 cup heavy cream
•chopped fresh parsley and grated Parmesan cheese for garnish

INSTRUCTIONS

•Heat a skillet over medium-high heat and add in the chopped bacon. Cook until crispy and remove from skillet. Set aside.
•Add butter and olive oil to the leftover bacon grease in the skillet.
•Add mushrooms to the skillet and coat them all around with the butter sauce. Sauté fir 2-3 minutes.
•Add in the garlic and chili flakes stir it through for a minute.
•Season with paprika, thyme, salt and pepper.
•Continue to cook over medium-high heat for 5 to 7 minutes, or until tender and nicely browned.
•Stir in the chicken broth.
•Stir in the heavy cream and continue to cook for 3 to 4 minutes, or until sauce starts to thicken.
•Add the bacon, stir to combine.
•Remove from the heat.
•To serve garnish with parsley and grated Parmesan cheese.

🍪What is a Christmas Cookie Exchange?

🎄A Christmas cookie exchange is a holiday season get-together, sometimes called a “cookie swap.” Each guest brings a different type of homemade cookies to swap with each other.

If you are looking for a festive keto cookie to bring, try these Chocolate Crinkle Cookies.

INGREDIENTS

•1 large egg, use room temperature eggs
•1 egg white
•1/2 cup Swerve Confectioners
•1/3 cup grass-fed unsalted butter, plus 1 Tbsp. melted(Many chocolate crinkle cookies use oil, but butter adds more flavor. Be sure to let your butter cool slightly before mixing it with the other ingredients as well.)
•1 tsp. vanilla extract
•1 cup blanched super fine almond flour
•3 Tbsp. coconut flour
•1/2 cup cacao powder or unsweetened cocoa powder
•1/8 tsp. xanthan gum. It is an effective thickening agent, emulsifier, and stabilizer that prevents ingredients from separating.
•1 1/2 tsp. baking powder
•Pinch of fine grained Himalayan salt
Optional: For Christmas
•1 Tbsp. zest of orange
•1 tsp. Ceylon cinnamon
•1/2-1 tsp. peppermint extract
•1/2 cup sugar-free chocolate chips added to dough
To Serve
•3 Tbsp. Swerve Confectioners to dust the cookies in

INSTRUCTIONS

•Mix together your almond flour, coconut flour, cacao, xanthan, baking powder and salt. Set aside.
•In a stand mixer or using a hand electric whisk, whisk the eggs and Swerve until light, about 2 minutes.
•Whisk in the butter and vanilla extract until combined.
•Sprinkle the almond flour, coconut flour, cacao, xanthan, baking powder and salt evenly into the wet mixture and whisk until just combined. Do not over mix.
•Cover the cookie dough and refrigerate at least an hour up to 3 hours.
•When ready to bake the cookies, remove the mixing bowl from the refrigerator.
•Preheat the oven to 325F.
and prep your cookie sheets to be nonstick using parchment paper.
• Place your powdered sugar in a shallow bowl or similar surface. •Use a tablespoon or similar sized scoop to scoop up cookie dough.
•Roll the dough into 1" balls and then roll each ball in the powdered sugar. Place each of the rolled cookie dough balls on the prepped sheet at least 2" apart.
•Bake for 7-9 minutes, while the cookies are still a little soft, press the cookies down slightly to get the crinkle effect. Do not over bake.
•Allow your cookies to cool on a rack.

As you dip your spoon into this delightfully creamy pumpkin dessert, it just feels like fall. All the sweet and spicy flavors fill your mouth and remind you of pumpkins, sweaters, boots, rainy days, and a dessert shared with family and friends.

INGREDIENTS

•1-8 oz package cream cheese
•1 cup heavy whipping cream
•1/2 cup Swerve Confectioners
•1/3 cup pumpkin puree
•1 tsp. pure vanilla extract
•2 tsp. pumpkin pie spice

INSTRUCTIONS

•Begin by putting the heavy whipping cream in a stand mixer and beating until stiff peaks form Transfer to a separate bowl.
•Whip the cream cheese and sweetener until light and fluffy.
•Mix in the pumpkin puree, pumpkin spice, and vanilla.
•Add in a little of the whipped cream to lighten the cheesecake mixture.
•Gently fold in the remaining whipped cream using a spatula.
•Spoon or pipe into small serving bowls.
Toppings: add a few sugar-free chocolate chips to the top of the mousse, sprinkle a little bit of cinnamon on top, add roasted pepitas, walnuts, pecans, or some sliced almonds.
•This recipe makes 4 servings. So you can simply multiply the ingredients by the number of people you are needing to serve. You can make it ahead of time and store it in the refrigerator for up to three days before you need to serve it.

Chili is what is for dinner tonight! No bean chili that is packed full of rich and savory flavors that warm you up on a cold day.

INGREDIENTS

•2 lb. grass-fed ground beef
•1 green bell pepper, chopped
•1 red bell pepper, chopped
•1 onion, chopped
•1/2 cup celery, chopped
•1-2 jalapeño, finely diced
•4 cloves garlic, minced
•6 slices sugar-free bacon
•1-14.5 oz. can fire roasted diced tomatoes
•1-14.5 oz. can diced tomatoes
•1-4 oz. can diced green chiles
•1-6 oz. can tomato paste
•2 Tbsp. chili powder
•1 Tbsp. ground cumin
•1/2 tsp. oregano
•2 tsp. paprika
•1/4 tsp. cayenne pepper
•2 cups beef or chicken bone broth
•Himalayan salt and fresh cracked pepper, to taste
•cheddar cheese and sour cream for topping

INSTRUCTIONS

•Cook the bacon in a skillet over medium-high heat until crispy; drain and set aside. Leave a thin layer of bacon grease in the skillet and dispose of the rest.
•Add the onions, celery, and bell pepper to the skillet and cook until it just begins to brown, about 8 minutes.
•Add the ground beef into the vegetables and cook until completely browned. Take a paper towel and soak up excess grease.
•Add the jalapeño and garlic, and cook for 1 minute.
•Add the chili powder, cumin, oregano, paprika, and cayenne pepper. Stir to combine and cook for an additional 30 seconds.
•Chop the bacon and add to the skillet.
•Reduce the heat to low and add tomato paste, diced tomatoes, green chiles, salt, and pepper.
•Stir in bone broth and then simmer uncovered for for at least 1 hour. Remember the longer you simmer the chili, the more flavor it takes on. You can add more broth or water if it gets too thick.
•Serve topped with shredded cheese and your favorite toppings.

Rich, creamy, and loaded with irresistible bacon and cheese, this easy Cauliflower Au Gratin with Bacon is the perfect dish to serve at cozy gatherings, holiday potlucks, or even a weeknight meal.

INGREDIENTS

•1 large head cauliflower cut into florets, about 5 cups
•2 Tbsp. Extra-virgin olive oil
•Himalayan salt and fresh cracked pepper, to taste
•10 slices sugar-free bacon, cooked and chopped
•3 Tbsp. grass-fed butter
•2 cloves garlic, crushed
•2 Tbsp. flour gluten-free
•1 1/2 cups 1 or 2% milk, for a thicker sauce use light whipping cream
•1 cup cheese gruyere, asiago, sharp cheddar or a combination
•1/2 cup Parmesan cheese grated, divided
•1/4 tsp. dried thyme
•1/2 tsp. nutmeg
•1/3 cup Panko bread crumbs gluten-free, optional or you can use ground Pork rinds

INSTRUCTIONS

•Preheat oven to 425F.
•Add cauliflower florets to a 9x13 inch baking dish along with extra-virgin olive oil, Himalayan salt and fresh cracked pepper, to taste.
•Toss to combine and spread cauliflower out in the dish. Bake in preheated oven for 15-20 minutes.
•In a large skillet over medium-high heat, cook the bacon until crispy and browned. Set aside on a paper towel. When cool, chop.
•While cauliflower is baking, add butter and crushed garlic to a large skillet or saucepan. Sauté over medium heat for 1 minute.
•Sprinkle flour into the pan and whisk for 1-2 minutes, or until it begins to form a paste.
•Reduce heat to medium-low. •Pour in room-temperature milk, a little at a time, whisking well after each addition. Wait to add the next amount until the sauce has thickened.
•Once all of the milk is added, turn off the heat and mix in gruyere cheese, 1/4 cup Parmesan cheese, pinch of salt, thyme, nutmeg, and chopped bacon. Reserving a few pieces of bacon for garnish.
•Pour sauce over baked cauliflower and toss to combine.
•Mix together remaining Parmesan cheese and breadcrumbs in a small bowl. Sprinkle over cauliflower.
•Reduce oven temperature to 400F. and return cauliflower dish to oven for 20-25 minutes.
•For an extra crispy topping, broil casserole for 2-3 minutes under a high broil.
•Remove from oven.
•Sprinkle with more cheese, bacon crumbles, and fresh parsley.
•ENJOY!
