With the season of the holidays being upon us, I wanted to start sharing a few recipes as alternatives to make better choices. As you all know, I encourage a low sugar to no sugar diet because sugar feeds all disease. It also makes inflammation worse in the body, which can cause pain. I personally follow a low glycemic/keto diet to help control the pain in my own body. I do not take any over the counter pain relievers and I prefer not to have to take herbs for pain and inflammation on a regular basis as I am so young to have to need things like that already.
A few years ago, my bestie and I made videos to teach people how to make more keto friendly foods. We made them from scratch. Now, there are a lot of mixes in the store to make life easier for those of us who choose low glycemic or keto diets. It is still best to do things from scratch as often as possible, but there are some alternatives at the store as well. Below is a recipe for a pumpkin cake that is keto and diabetic friendly.
Keto Pumpkin Cake 😋🎃🤤
Ingredients
1 box Duncan Hines Keto-Friendly Yellow Cake Mix
1/2 cup water (or the amount specified on the box)
2 tablespoons melted coconut oil (or the amount specified on the box)
3 large eggs (or the amount specified on the box)
1/3 can (about 5 oz, or 1/2 cup + 3 tablespoons) pure pumpkin puree (not pumpkin pie filling)
1 teaspoon pumpkin pie spice
Keto-friendly chocolate chips or chopped pecans/walnuts (optional, to taste)
Instructions
1. Preheat the oven to 350°F (175°C) and grease a baking dish (a 9x13 pan works well, or ensure the batter is no more than one inch deep in any dish for best results).
2. Mix the dry cake mix according to the package directions first, combining it with the eggs, oil, and water.
3. Add the pumpkin puree and pumpkin pie spice to the batter. Mix until everything is well combined and the batter is smooth.
4. Stir in any optional add-ins like chocolate chips or nuts.
5. Pour the batter into your prepared baking dish.
6. Bake for approximately 20-25 minutes, or until a toothpick inserted into the center comes out clean.
7. Cool the cake completely before frosting or serving. A keto vanilla frosting pairs perfectly with the pumpkin flavor. We also put crushed pecans and sprinkled cinnamon on top at the very end which added a nice touch.
