I don't know about you, but I LOVE pasta. Like I would eat it every day if I could.
Unfortunately, though, I can't eat pasta every day, so I've had to figure out some healthier substitutions. On the days when I really want pasta, but I haven't reached my vegetable goal for the day, I like to make spaghetti using spaghetti squash! (You can buy precooked spaghetti squash from Costco for convenience, too.)
I also like to add all sorts of vegetables to my sauce to get some extra vegetables in. This is a great way to get your kids to eat extra vegetables, too!
Vegetables I like to add to my sauce:
* Onion
* Shredded carrots
* Mushrooms
* Riced cauliflower
* Riced broccoli
I prefer sauteing the vegetables first, but you could also let the vegetables cook in the sauce if you have extra time.
What are your thoughts on spaghetti squash? Have you tried it?
