A High Protein, High Fiber Side Dish or Meal (CNC Dietitian and Patient Approved)

1 box of bean or red lentil pasta
1 can chickpeas/garbanzo beans rinsed and drained
2 cups pre-washed kale/cabbage coleslaw blend- If you would like to replace it, simply use any coleslaw or broccoli slaw option. You may also use a mix of finely chopped kale, thin sliced cabbage and shredded carrots.
1.5 cups diced Persian or English cucumber
1 cup diced dill pickles
½ cup diced red onion
⅓ cup chopped fresh dill
For the dressing:
¾ cup lowfat plain greek yogurt
2 tablespoon mayonnaise
¼ cup dill pickle juice
¼ cup chopped fresh dill
1 teaspoon onion powder
½ teaspoon garlic powder
1 tablespoon dried dill
½ teaspoon salt
¼ teaspoon black pepper

Instructions:
Cook pasta according to package instructions and rinse + drain chickpeas. Allow pasta to cool.
To a large bowl, add cooked pasta, chickpeas, kale slaw, cucumbers, pickles, red onion and fresh dill.
For the dressing: in a small bowl whisk together all the ingredients under the Dressing list. Instead of the fresh dill and dried dill and other dried ingredients/seasonings, you could use 2-3 tsp of Trader Joe's Dill Pickle Seasoning located by the other dry herbs/seasonings. Once fully combined- taste and adjust seasoning and vegetables to desired preferences.

With the help of our Obesity Caucus, effective immediately, the AMA has just elevated Obesity as a Public Health Priority.

What does this mean? Resolution 427 called on the AMA to elevate obesity in their strategic plan. This will put obesity on equal footing as other critical diseases including hypertension and pre-diabetes.

Thank you to American Medical Association Caucus members, and to the for placing their trust in me to represent them at the AMA.

Get to know your CNC staff: Rebecca Groen
Rebecca has been CNC store clerk and protein shake expert for 2.5 years. To relax, she enjoys art. She stays active with gardening, walking and spending time outside. Her favorite CNC store item is a tie between the Salted Toffee Pretzel bar and the protein coffee. Her favorite thing about working for CNC is meeting new people and talking about fun recipes clients are using. A fun fact about Rebecca is that she is a very talented artist from chalk art to pumpkin sculptures she is always bringing a bit of art to our lives.

Get to know your CNC Staff: Svetlana
Svetlana has been with CNC for 27 years and has been assistant office manager for the last 12 years. She enjoys taking trips with friends and family to relax. To stay active, she enjoys skiing and hiking. Her favorite item from CNC store is the Caramel Coca Bar but also gets the Chocolate Wafer Bar to take home to her husband. She loves working for CNC because she finds it very rewarding to see patient progress and happiness during their transformations for health. A fun fact about Svtlana is that she keeps her Christmas Tree up until February to continue the joy of the season.

Chelsea has been a Medical Assistant with CNC for three years. She enjoys spending time with her five kids and husband, cooking, and baking to relax. To stay active, she is always chasing kids and running around the house dancing and singing. Her favorite CNC store items are the beef sticks and BBQ chips. She loves working for CNC because of the caring and supportive team. She loves knowing she can make one patient smile each day. A fun fact about Chelsea is that is an amazing mama and between balancing five kids and work you'll still never catch her without a smile on her face.
