Our dryer has been so slow. What used to take 30 to 45 minutes to dry has been taking about 100 minutes. Before buying a heating element, try this... Take out the lint catcher and run water through it. If the water sits on top and does not drain, you have a build up of wax from fabric softener sheets. With a SOFT brush, gentle cleaner and hot water, clean thoroughly. Allow catcher to air dry. You will find your "dry time" is much less and it will save you a service call.

*If that doesn't work, check the vents for blockages.

BEST EVER Chicken and Rice Casserole

2 cups cooked/shredded chicken *or diced cooked chicken
1 package Onion soup mix
1 can cream of mushroom soup
1 can cream of chicken soup
1 1/2 cups milk
3/4 cup sour cream
1/2 cup water
2 cups long grain rice *uncooked
salt/pepper to taste

Preheat oven to 350 degrees.
In a medium bowl, combine the cooked chicken, onion mix, cream of mushroom/chicken soup, milk, sour cream, water, rice, and salt/pepper.
Spray a 9x13 baking pan with cooking spray.
Pour chicken/rice mixture into prepared pan.
Cover pan with aluminum foil.
Place pan in preheated oven and cook for 1 hour 15 minutes.
Remove foil and cook an additional 15 minutes.
Remove from oven and serve! Enjoy!

This Taco Dip is super easy. All you need is 16 oz sour cream OR non-fat plain Greek yogurt, a block of softened cream cheese and 1 pack taco seasoning. Mix it all together until smooth. Put it in a baking dish and top with lettuce, tomato and cheese and eat with tortilla chips.

One-Pot Cabbage Casserole

2 lbs. ground beef
Salt and pepper or creole seasoning
1 onion, chopped
1 cup rice, uncooked
3 large handfuls of roughly chopped cabbage
1 8 oz. can tomato sauce
2 cups of water (I just use the tomato sauce can twice)
1 14 oz. can diced tomatoes, undrained
1 cup shredded cheese

Season and brown ground beef and onions. Drain grease.
Once onions are clear, add rice, cabbage, tomato sauce, 2 cups of water (or use tomato sauce cans) and diced tomatoes. Stir.
Let it come to a boil and then reduce heat to medium low and cover to simmer for about 20 to 30 minutes or until rice is done and cabbage is soft.
Do not lift lid before 20 minutes to make sure rice cooks well.
Once cooked, top with cheese and cover with lid to melt a few minutes.

I arrived at the address and honked the horn. After waiting a few minutes I honked again. Since this was going to be my last ride of my shift I thought about just driving away, but instead I put the car in park and walked up to the door.
"Just a minute", answered a frail, elderly voice. I could hear something being dragged across the floor.
After a long pause, the door opened.
A small woman in her 90s stood before me. She was wearing a print dress and a pillbox hat with a veil pinned on it, like somebody out of a 1940's movie. By her side was a small nylon suitcase.
The apartment looked as if no one had lived in it for years. All the furniture was covered with sheets. There were no clocks on the walls, no knick knacks or utensils on the counters. In the corner was a cardboard box filled with photos and glassware.
"Would you carry my bag out to the car?" she asked.
I took the suitcase to the cab, then returned to assist the woman. She took my arm and we walked slowly toward the curb. She kept thanking me for my kindness.
"It's nothing," I told her. "I just try to treat my passengers the way I would want my mother to be treated."
"Oh, you're such a good boy," she said.
When we got in the cab, she gave me an address and then asked, "Could you drive through downtown?"
"It's not the shortest way", I answered quickly.
"Oh, I don't mind. I'm in no hurry. I'm on my way to hospice."
I looked in the rear view mirror. Her eyes were glistening.
"I don't have any family left," she continued in a soft voice. "The doctor says I don't have very long."
I quietly reached over and shut off the meter. "What route would you like to take?" I asked.
For the next 2 hours, we drove through the city. She showed me the building where she had once worked as an elevator operator.
We drove through the neighborhood where she and her husband had lived when they were newlyweds. She had me pull up in front of a furniture warehouse that had once been a ballroom where she had gone dancing as a girl.
Sometimes she'd ask me to slow in front of a particular building or corner and would sit staring into the darkness, saying nothing.
As the first hint of sun was creasing the horizon, she suddenly said, "I'm tired. Let's go now."
We drove in silence to the address she had given me. It was a low building, like a small convalescent home, with a driveway that passed under a portico. Two orderlies came out to the cab as soon as we pulled up. They were solicitous and intent, watching her every move. They must have been expecting her.
I opened the trunk and took the small suitcase to the door. The woman was already seated in a wheelchair.
"How much do I owe you?" she asked, reaching into her purse.
"Nothing", I answered.
"You have to make a living", she said.
"There are other passengers", I responded.
Almost without thinking, I bent down and gave her a hug. She held on to me tightly. "You gave an old woman a little moment of joy," she said. "Thank you."
I squeezed her hand, and then walked into the dim morning light.
Behind me, a door shut. It was the sound of the closing of a life...
For the rest of the day, I could hardly talk. What if that woman had gotten an angry driver, or one who was impatient to end his shift? What if I had refused to take the run, or had honked once, then driven away? On a quick review, I don't think that I have done anything more important in my life. We're conditioned to think that our lives revolve around great moments. But great moments often catch us unaware, beautifully wrapped in what others may consider a small one. ❤

Beef & Cabbage Casserole

½ t ground black pepper
1 (14.5-oz.) can plain (nothing-added) crushed tomatoes
½ t dried oregano
2 cups largely diced green cabbage
1¼ lbs. 95% lean ground beef or ground turkey
2 cups diced red bell pepper
1 cup reduced-fat, shredded mozzarella
1 t salt
2 chopped scallions

In a non-stick skillet, cook the ground beef over medium to high heat, stirring constantly to break up the meat into small pieces for about 5 minutes.
Once the meat is cooked, transfer it into a bowl and set aside.
In the same skillet, add the green cabbage, red peppers, tomatoes, and scallions, and cook over medium heat for about 5 minutes until the cabbage is tender.
Combine the cooked ground beef with the cabbage mix, and add salt, pepper, and dried oregano.
Spread this mix into a 12-inch ovenproof enamel or ceramic casserole dish and cover with the reduced-fat mozzarella cheese.
Bake at 400 for about 10 minutes until the cheese is bubbly and well browned.
Divide casserole into 4 equal portions (about 2½ cups per serving) and serve.
