I drink my greens, eat my greens and create with my greens!
It’s so fun to be creative in the kitchen, specially if that results in something highly nutritious and at the same time delicious! Kind of a passion of mine 😉
I was craving pesto and didn’t have all what I needed but rapidly adjusted my brain and created a masterpiece.
Vegan Pesto in 3min:
🌱 A big bunch of greens (traditionally basil but I used cilantro and turned out incredible!)
🌱A cup of seeds (traditionally pine nuts but I used pumpkin seeds)
🌱1/2 cup olive oil
🌱1 Tbsp nutritional yeast
🌱 1/2 lemon (juice)
🌱 salt and pepper
🌱garlic (optional, I don’t use it and is equally delicious)
🌱1/4 cup water approx to reach the desired consistency (a bit more if it’s to chunky and you want a more spreadable pesto)
Blend all in a food processor and enjoy!
Used it last night for pizza, this morning for kids sandwiches and again today with quinoa and arugula for lunch. Such a versatile and super healthy spread to use and add personality to your dishes 😉
