Winter is when I really start craving a hot, nourishing soup—and I’m guessing many of you do too. If you’re like me, you probably have vegetables in various stages of freshness in your fridge, including a few that are firmly in the “use these now” category.

This is one of my favorite ways to turn those vegetables into a deeply comforting, anti-inflammatory winter soup. We’ve made this twice recently by simply roasting whatever vegetables we had on hand and blending them with warming spices like turmeric, ginger, cumin, coriander, cinnamon, and smoked paprika. The result is rich, creamy, and incredibly satisfying—without being complicated.

Happy New Year! I hope you spend it with loved ones! We chose to backpack deep into the WNC mountains for a few days to reset for 2026. New trail with many deep creek crossings so ended up barefooting it for abit between crossings, figured some grounding wouldn’t hurt! Fortunately the leaf bed was soft. Great times!
