we make our mousse taste like heaven ;-)

chocolate mousse [ sit-down delight ]

no one new to live food would even anticipate such simple marriage made magical
with raw cream, cacao & sweet spice...

it's bittersweet & w e e p i n g l y d e l i c i o u s

whirling up gorgeous, it comes together fast in seconds

simply follow the simple steps
via 8 oz jar blending / serve 2

1) fill up [ 6 live ingredients ]

yolk, cream, spice, sweet, salt, cacao...& in this order

a) pastured egg yolk
[ no egg white please...'cos the batch will thin out too much to ever firm up ]

b) unpasteurized cream*
fill up the jar until 1" open space at the top
[ to whip the air in for firming ]

*again - unpasteurized dairy a must

unpasteurized fat is nourishing & medicinal
it's truly a healing food packed with healthy saturated fat, well-balanced omega3 & live nutrients...

in contrary
pasteurized fat - organic or not - is processed like plastic
ie. totally toxic
therefore our body cant recognize, digest nor eliminate it, forcing the liver to warehouse the burden

b) aromatic spice
1 tsp cinnamon powder [ sweet spice to balance blood sugar ]
1/2 tsp vanilla powder

c) sweetness
1 soft Khadrawy date
1 TBSP of unheated honey

[ for diabetic body
use 1/4 tsp sugarLeaf instead, to partially or completely replace the fructose
adjust to your own taste / condition ]

d) a hint of Celtic salt
[ about 1/16 tsp to enhance flavor + aid digestive juice
+ activate glial cellls which are smart brain cells for fast connection

e) cacao powder
start with 1 heaping TBSP
to unlock the delicate contrast of the bittersweet, the rich & the creamy

think
the more cacao, the darker the color
yet the trade off :
the more cacao, the bitter it becomes, the more sweetness needed to balance off the batch...
therefore we opt for 1 TBSP cacao per 8 oz batch as a happy medium
always adjust to your own...

2) blend well [ thicken & stiffen ]

blend well for 10 sec via Oster blender

then open the lid to check how the mixture is whirling up
it should take on a fluffy cloudlike shape by now

close the lid again
shake jar upside down for 3 sec for insurance
blend for 5 more sec or til the silky batch gets stiffer, as desired

3) cold storage [ fridge or freezer ]

best to consume within 24 hr to optimize live enzyme & nutrients
kept it refrigerated...

or straight to the freezer if you need to save the mousse to transform other frozen desserts [ ice cream ]

[ before next serve...transfer the frozen back in the fridge for an hour to soften ]

4) serve at once [ sit-down delight ]

It's mid January and much to my dismay I'm still sporting my holiday gut and feeling run done ....so much for my New Year's optimal health and weight loss resolution. My 2nd shot at optimal health and weight loss was slated for March 1, Ash Wednesday. Every year, for the past 20 years, I have done a 45 Day Lent/Spring Diet & Cleanse. I'm always astonished how great I look and feel during and upon its completion.

This past Sunday morning, as I gazed in the bathroom mirror, I had an Oprah "aha" moment!
"Life is too short to look and feel like crap." I could no longer look away from my expansive belly, recent sinus flare ups and carbohydrate binging. I decided then and there to begin my 2017 Lent/Spring Diet & Cleanse.

Here are some of the benefits of the Lent/Spring Diet & Cleanse:

1. Weight loss
2. Significant energy increase
3. Decreases/Eliminates muscle and joint aches and pains
4. Decreases/Eliminates offensive breath or body odor
5. Improves brain functions...mood(depression), memory & focus(ADD, ADHD)
6. Improves vision & hearing

Hands down this is one of the easiest and healthiest diet & cleanses one can do. pasture NOT factory farm raised
Eggs (free range/organic)
Organic vegetables raw & lightly steamed
Unpasteurized milk, cream, yogurt, cheese & butter when available (2nd choice: pasteurized, organic, grass fed, pasture raised dairy products)
Homemade/healthy soups & bone broths
Organic healthy grain alternatives, quinoa, flex, buck wheat, amaranth
Water (filtered or spring)
Fresh unpasteurized organic green vegetable juice
Probiotic (cultured/organic) foods: unpasteurized yogurt, kombucha, sauerkraut & other pickled organic veggies

2. WITH SOME MODERATION
Ocean caught fish, especially tuna, swordfish & shark (high mercury levels), eat raw or on the rare side
Raw unheated honey
Organic fruits (berries & low glycemic index fruits)

3. NOT ON THIS DIET
Refined sugars: white & brown sugar, high fructose corn syrup, refined (heated) honey & maple syrup

It's that time of year again. On Wed Feb. 18th., I started my "Annual Spring/Lent Diet & Cleanse." Every year, for the past 20 years I refrain from refined sugar, heated oils, fried foods, bread, pasta, grains, alcohol and pasteurized dairy for 45 days.

This diet & cleanse is a cake walk compared to most. Eating delicious, natural,live foods that satisfy the palate, nourish (build) the body, while at the same time detoxifying(cleansing) the body is easy.

If you are interested in weight loss, more energy, improved brain functions (moods, memory & focus), improved digestion, improved skin tone and color, a stronger immune system, normalized blood sugar levels and a restful nights sleep then this diet & cleanse is perfect for you!

When it comes to diets, cleanses and eating healthy, I'm a veteran. I attribute my success to commitment and planning. Planning meals ahead, eating lots of good fats, proteins and veggies and always having healthy snacks available is key.

My Typical Lent Diet & Cleanse consisted of:
1. Clean meats, preferably organic and grass fed (clean: no hormones/antibiotics)
2. Poultry & eggs, no hormones/antibiotics and cage free
3. Raw unpasteurized dairy, milk cheese, cultured butter, yogurt and cream
4. Organic vegetables raw and steamed.
5. Organic fruit- daily fructose intake not to exceed 25 grams
6. Organic raw nuts and seeds.
7. Raw unheated honey(maximum 2 teaspoons daily)

In a nutshell, here are the benefits I have noticed 34 days into my Spring Diet and Cleanse:
1. Weight loss....I've lost 5 lbs. and 2 inches around my belly.
2. Significant energy increase
3. Absence of muscle and joint aches and pains
4. Better focus & mood
5. Increased reflexes & coordination
6. Increased sense of smell & hearing
7. Sound night's sleep
8. Loss of carbohydrate/sugar cravings...I'm no longer a slave to my sweet tooth!
9. No longer fixated on food...I enjoy my meals & snacks but they no longer rule my day!
10. Absence of any seasonal colds, flu's sinusitis or allergy problems:)

This year, my diet and cleanse took the ultimate twist. I decided to eat a 100% live food diet. Live foods are foods that have not been heated above 105 degrees. Heating foods destroys enzymes and beneficial probiotic microorganisms. Over time a diet of primarily cooked enzyme deficient foods, along with processed, toxin and sugar laden foods, leads to heart disease, cancer, diabetes, Alzheimer's and premature death to name a few.

So far so good! My first true test took place 3 days into my live food diet. I attended a post Mardi Gras Masquerade party/potluck. I ate an early dinner in preparation. It consisted of chicken ceviche, pickled dikon, cabbage, avocado and home grown sprouts. For dessert, I polished off an 8 oz jar of raw chocolate mousse.

My dinner was so satisfying, I didn't bother bringing any healthy treats. This was a first for me, Dr Ed and treats typically go hand in hand. I did bum out a few of the folks there. They were anticipating some of Dr Ed's healthy treats!

The party was attended by predominately single baby boomers....that's me in the middle. Most of the action wasn't taking place on the dance floor or around the cozy outdoor fire but in the kitchen and around the bar. Food and alcohol were definitely the drugs of choice. These areas had no pull on me as they once did in the past!

My 32 oz mason jar, full of homemade kombucha, made quite a splash. It evoked all sorts of comments and lots of puns.

"Mind over matter" did play a role in my model behavior. However, the real secret to my success was a tummy full of yummy live foods before hand.

The first week of March, I flew out to Las Vegas. That was my biggest test. There I met up with dad, his brother and 3 of my cousins. Luckily for me, dad's winter home is just minutes away from a Whole Foods Market. I'm proud to report that even Vegas couldn't corrupt me. I watched in amusement as my cousins stuffed themselves with hot dogs, pizza and beer. Funny thing....I wasn't the least bit tempted.

At the end of this week, I will be attending a two day chiropractic seminar in Irvine. No fast food or hotel meals for me. I will be armed with cooler in hand, chalk full of healthy, live foods. I'm sure even among my health conscious colleagues, I'll raise some eyebrows!
