Try it and let me know how you love it.

Serves 4–6
Ingredients
• 2 tbsp avocado oil
• 1 medium purple onion, chopped
• 1 lb baby potatoes, halved
• 1 tbsp garlic paste
• 2–3 large carrots, chopped
• Black pepper, garlic salt, lemon pepper, kosher salt, onion powder, Italian seasoning (to taste)
• 4 cups vegetable broth
• 1-2 zucchini, chopped
• 1–2 cups frozen petite mixed vegetables (carrots, corn, green beans)
• 1 can tomato paste (6 oz)
• 2 bay leaves
• Cooked brown rice, for serving
• Fresh lemon juice
• Fresh cilantro, chopped

Heat avocado oil in a large pot over medium heat.
Add chopped purple onion sauté a few minutes then add baby potatoes, garlic paste, carrots, and all seasonings. Mix and Sauté until onions soften and potatoes begin to lightly brown.
Pour in 4 cups of vegetable broth. Cover and simmer for about 10–15 minutes.
Add zucchini, frozen mixed vegetables, tomato paste, and bay leaves. Stir well.
Cover again and simmer until potatoes and carrots are tender and flavors are blended, about 15–20 minutes.
Remove bay leaves. Serve the stew over cooked brown rice.


Finish with fresh lemon juice and chopped cilantro.

Onion water! Bring to a boil drop down to a simmer immediately for about 15 minutes strain and drink. If you have extra, you can store it in the fridge for up to 2 to 3 days. Get better soon.
