The Scottish bagpipe is a unique instrument, unlike most other woodwind instruments. It's played at most celebrations ... including Christmas festivities. I think the melody is beautiful, sad, and inspiring simultaneously.

Milking was a tedious daily job. A small army of milkmaids would definitely be a gift. Milk is a powerful symbol within most cultural traditions. It is the fluid of eternal life, fertility, and abundance. Milk symbolizes the MOTHER, it is deeply connected with life itself.

Recently, we saw a pair of black swans in a small lake. They were magnificent. Apparently, they had chicks the previous year. Maybe there were 7 swans swimming. In older cultures, a swan was often the highlight of the Christmas feast. Let's not share this with the black swans I saw recently.

Typically geese lay eggs between February and May. So geese laying in December would result in an early egg harvest. Goose eggs are excellent sources of many nutrients such as protein, iron, and a fair source of calcium. Have you used goose eggs in any of your specialty dishes?
