A warm bowl, made with purpose!

Chef is in the Healthy Kitchen today preparing one of our nourishing guest favorites: lentil bisque. Packed with plant-based protein, fiber, and comforting flavor, it’s the kind of meal that supports both satisfaction and wellness.

Lentil Bisque Recipe:

Ingredients:
• ½ teaspoon olive oil
• 1 cup yellow onion, diced
• 1 cup celery, diced
• 1 cup carrots, peeled and diced
• 1 cup yellow bell pepper, diced
• 2 tablespoons garlic, minced
• 1 cup red lentils
• 4 cups vegetable broth
• 1 (14 oz) can diced tomatoes, no salt added
• ½ cup sun-dried tomatoes, diced
• 4 oz goat cheese (optional)
• 2 tablespoons fresh basil, minced
• ½ teaspoon kosher salt
• ½ teaspoon black pepper

Instructions:
• Heat a large saucepan over medium heat. Add olive oil and swirl to coat the bottom.
• Add onion, celery, carrots, and peppers. Cook for 5–8 minutes until soft, stirring occasionally.
• Add garlic and cook for 1 minute.
• Add lentils and vegetable broth. Bring to a boil, then reduce heat and cook for 10–15 minutes until lentils are soft.
• Stir in remaining ingredients and cook for about 5 more minutes, until sun-dried tomatoes are soft.
• Serve warm.
