Cucumber salad has been my hyperfixation on and off through all of 2025. We’ve hit an “on” season again.

Super easy preparation for this one - i just sliced cucumber and green & red onion, tossed in some shredded carrots and cabbage and edamame then added coconut aminos, sesame oil, and a tsp of paleo mayonnaise for each serving (I usually make a big batch of around 3 servings using one big english cucumber, so use 1 tbsp of the mayo).

Nothing like a little stuffed pepper 🌶️ I usually just cooked some ground turkey on the stovetop with some onions and then mix in fresh rice and tomato sauce (always because it’s the best) - then just stuff it in a par baked bell pepper and roast for 30 mins at 375!

Side salad is super simple as well, just some butter lettuce, red onion, chickpeas, and cucumber with a drizzle of caesar dressing. Scrumptious lunch!

In an effort to get out of the ‘eggs everyday for breakfast’ habit, I decided to whip up a batch of chia pudding, and boyyyy am I glad I did.

Simply combine and mix the below ingredients & leave to rest overnight:

2 tbsp chia seeds
1/2 cup almond milk
1/2 cup dairy free yogurt
1 tsp maple syrup
1 tsp vanilla extract
1 tsp cinnamon

Back from an amazing trip to France, where I ate allllll of the delicious cuisine! I’m so grateful for my experience but am also so happy to be getting back into the regular routine.

Nothing sounded better to me tonight than a nice nutritious sheet pan dinner - simply roasting red pepper, onion, zucchini, and sweet potatoes alongside chicken thighs with a touch of seasoning and olive oil!

I also drizzled some green goddess on top for some extra pizzazz ✨
