Cozy up this winter with a simple, mild chickpea curry that is perfect for sharing at a potluck or enjoying during a quiet evening at home. It is warm, comforting, and easy to prepare. 🥘

Simple Mild Chickpea Curry

Ingredients:
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 tablespoon mild curry powder
1 teaspoon ground cumin
2 cans chickpeas, drained and rinsed
1 can diced tomatoes
1 cup coconut milk
Salt and pepper to taste
Optional: fresh spinach or chopped cilantro and fresh chilis

Directions:
1️⃣ Heat olive oil in a large pan over medium heat. Add diced onion and cook until softened.
2️⃣ Stir in minced garlic, curry powder, and cumin. Cook for 1 minute until fragrant.
3️⃣ Add chickpeas, diced tomatoes, and coconut milk. Stir well and bring to a gentle simmer.
4️⃣ Let simmer for 15 to 20 minutes, stirring occasionally. Add spinach if desired and cook until wilted.
5️⃣ Season with salt and pepper to taste, then serve warm.

Serve with rice or warm naan and enjoy a flavorful winter meal surrounded by the comfort of a delicious home cooked meal!
