Cilantro Lime Cauliflower Shrimp Bowl ⏩
INGREDIENTS
Shrimp
Cauliflower rice
Avocado
Cherry tomatoes
Onion & garlic powder
Cilantro
Avocado oil
Lime juice
DIRECTIONS
Coat pan with avocado oil & put shrimp on once hot. Add lots of garlic powder & sauté. Once they’re pink, they’re basically done, but at this point I add more oil & garlic powder & up the heat so they get a little crispy on the outside.
For the cauli rice, sauté it in minced garlic, olive oil, lots of lime juice, & chopped cilantro. Cut up cherry tomatoes & avocado then mix them with lime juice & cilantro. I sprinkled sea salt over everything once done.

One pot creamy sausage, bacon and tarragon pasta
⬇️ Recipe below ⬇️
And the obsession with one pot meals continues 😂 we all really enjoyed this, the flavors all work together so well. 4 empty bowls and not much washing up so everyone’s happy. 🙌
Ingredients.
8 sausages (chopped)
150g diced bacon
1 onion
2 cloves garlic
2tbs tarragon
1tbs tomato purée
1tbs cider vinegar
300g pasta
600ml hot chicken stock
600ml warmed semi skimmed milk.
Method.
Fry off your sausages in a large frying pan along with the bacon. Once that’s starting to brown add in the onions and cook until soft. Add in the garlic, tomato purée and the tarragon and mix in, then add in the apple cider vinegar and allow to cook for a few minutes. Add in the uncooked pasta along with the milk and the stock and give it a good mix. Cook on a medium heat for around 10 minutes stirring occasionally, then pop a lid on and cook on low for another 5-10 until the pasta is cooked through, adding more liquid if necessary. Serve and enjoy.

This Buffalo chickpea salad is spicy, crispy, creamy, and refreshing in every single bite and it’s super simple to make! Here’s how I made it:
Add some romaine lettuce 🥬 to a bowl with chopped celery, carrot 🥕 , avocado 🥑, cherry tomatoes 🍅, red onion 🧅 and crispy chili roasted chickpeas (chickpea recipe link in bio) and top with crumbled feta, blue cheese dressing, and a generous drizzle of hot sauce.

Quick easy Turkey BLT lettuce wraps with avocado 🥑 and a soft-boiled egg 🥚 for lunch today! I used thick-sliced deli turkey and uncured pre-cooked bacon 🥓 from Trader Joe’s that I crisped up in the microwave for 30 seconds then placed in butter lettuce 🥬 leaves with tomato 🍅 slices and a little seasoned salt.

🥚 For the jammy eggs, fill a pot with enough water to cover the eggs and bring them to a full boil. Carefully place the eggs into the boiling water and boil for 8 minutes. Immediately remove the eggs to an ice bath and let cool in the cold water for 10 minutes before peeling.
It was a tasty lunch and really hit the spot! Hope you’re having a great day!

This creamy, alfredo sauce is loaded with chopped sun-dried tomatoes, Italian herbs, garlic, and fresh spinach coated over tender pasta noodles, and then topped with chopped basil.
Sun-Dried Tomato Alfredo Sauce is an incredibly easy to make in under 30 minutes.
Ingredients:
3 tbsp dairy free butter suggestion in the post
1 tbsp sun-dried tomato oil
2 tbsp gluten free all-purpose flour suggestion in the post
⅓ c chicken stock/broth vegetable stock works too
14 oz canned coconut milk
1 tsp Dijon mustard suggestion in post
¼ c nutritional yeast
½ tsp garlic powder or 2 cloves of fresh garlic, minced
½ c fresh spinach
⅓ c chopped sun-dried tomatoes
ground black pepper and salt to taste
12 oz gluten free pasta noodles prepared according to box directions
optional add-ins--grilled chicken, sautéed shrimp, bacon crumbles, mushrooms
garnishes-- chopped basil and dairy free parmesan cheese
Instructions:
Add butter and sun-dried tomato oil to a saucepan on medium heat until the butter is melted.
Then add in the flour and briefly fry it. Add in the chicken stock and coconut milk.
Whisk to remove any clumps.
Continue stirring until the sauce begins to boil and thicken. This sauce will continue to thicken as it cools.
Remove the sauce from heat and allow to thicken more.
As the sauce thickens for a minute stir in the Dijon mustard, nutritional yeast, garlic powder, ground pepper, salt, spinach, and sun-dried tomatoes.
Top pasta noodles with sauce and combine. Garnish with chopped parsley, shopped bacon, and parmesan cheese if desired.
Serve immediately.
Refrigerate and store leftovers in an airtight container up to 3 days.

Brussels sprouts were sautéed with diced speck, garlic, fresh parsley, and a fig balsamic glaze (you can use some balsamic vinegar and pomegranate molasses if you like)

Marinated a packet kale slaw mix with tahini, garlic, lemon (s&p and some water all blitzed )

And topped with roasted tin chickpeas that I tossed in some evoo, cumin, smoked paprika, S&P

Served with some pesto asparagus and tomato puff pastry parcels as well as some cheese and prosciutto breadsticks.
