Texas Academy, an affiliate of the Academy of Nutrition and Dietetics, is a not-for-profit professional organization of over 4,000 registered dietitian nutritionists, dietetic technicians, and students in Texas. Texas Academy members provide expert food and nutrition resources for Texans. They are here to help Texans improve and manage their health—and make eating an enjoyable and delicious experience. Our members work in a variety of settings such as: business and industry, schools, universities and research centers, hospitals and clinics, public health units, long-term care facilities, pharmaceutical companies and health fitness centers. The regions leadership team consists of a region director (voting member of the Texas Academy board of directors), a region director elect, and several committee chairs. Meetings and networking events are held throughout the region in different areas. The Texas Academy is governed by a 12 member board of directors (BOD) that is voted in a statewide election.

"Migratory patterns across the Americas have increased significantly over the past century. Each Latin American country holds a distinct cultural and historical background that deserves recognition. Exploring these differences, while honoring regional commonalities, can help “rescue their uniqueness” and deepen our understanding of Latinidad. In the US, migrants from diverse Latin backgrounds have built strong communities, and their culinary traditions are enriching the national food landscape. This vibrant scene calls for greater awareness of emerging food trends and their implications for health and wellness. It is essential to recognize the culinary heritages and explore culturally relevant wellness strategies. Addressing these complexities requires engaging with the cultural philosophies and anthropological dimensions of Latin communities. Such understanding is vital for US dietitians and health professionals working with Latino/a/x populations. Sponsored by DairyMAX.

Dr. Marianella Herrera-Cuenca is a Venezuelan physician, registered dietitian, researcher, and educator whose life and work have been shaped by the understanding as soon as she graduated from medical school that she needed to get in depth into the nutritional world. And so she did, she has more than 110 peer reviewed publications in the field, has a long trajectory of collaboration with the Academy of Nutrition and Dietetics, and has work as a consultant for international agencies such as UNICEF and the WFP. Currently, she is the LAHIDAN Chair, and is passionately building a consulting firm (Food Evidence) to offer a holistic view of the contemporary nutrition problems.”

"This presentation explores the benefits of a weight-inclusive approach in dietetic practice with adolescents. Instead of focusing on weight loss or BMI, this method emphasizes holistic well-being, body respect, and behavior-based outcomes. Key topics include:

(1) developmental changes during adolescence that make weight-centric messaging potentially harmful;
(2) Health at Every Size principles like intuitive eating, joyful movement, and self-care;
and (3) how weight-focused interventions may lead to disordered eating, low self-esteem, and healthcare avoidance.

Practical strategies for building trust, using neutral language, and setting goals around energy, mood, and lifestyle will be discussed. The importance of cultural sensitivity and inclusivity will be highlighted to support diverse body types and backgrounds. The goal is to empower dietitians to help adolescents and families build positive relationships with food and body image while reducing risks linked to weight stigma.

Jennifer Vittitow received her degree in nutrition from the University of Texas at Austin in 2005 and completed a dietetic internship in North Carolina in 2006. She then went into private practice as a registered dietitian for several years prior to joining the Eating Recovery Center in 2015 in order to work with patients in higher levels of care and to be a part of an interdisciplinary team. In 2021, she became the Nutrition Director over ERC’s South Region and in 2025 transitioned into a National Nutrition Director role. Jennifer finds joy in educating dietitians, clinicians, and caregivers about how to provide the very best care to those in the process of recovering from an eating disorder. When Jennifer is not working, she enjoys trying out new desserts around town and hanging out with her husband and 4 doodles.”
